HONEY CORNBREAD MUFFINS

It is soup weather here in Maine, and what is a better accompaniment than cornbread? Honey Cornbread muffins in fact. Served hot with butter and honey! These are delicious, not too sweet and moist.  This recipe makes 18 delicious muffins. I find that my kids tend to grab them for a snack much easier than cutting a slice of cornbread.

HONEY CORNBREAD MUFFINS

HONEY CORNBREAD MUFFINS

Prep Time: 15 minutes
Cook Time: 13 minutes
Total Time: 28 minutes

Not too sweet, perfectly moist, made as individual muffins, a delicious side and easy to grab snack.

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 cup sugar
  • 1 TBSP baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs, beaten
  • 1/2 stick unsalted butter, melted
  • 1/4 tsp vanilla
  • 1/4 cup honey

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a bowl, combine corn meal, flour, sugar, baking powder and salt.
  3. In a separate bowl, whisk together milk, eggs, melted butter, vanilla and honey until well blended.Combine wet and dry ingredients and stir until just blended.
  4. Pour batter into greased or lined muffin pan.
  5. Filling 1/2 full.
  6. Bake 13-17 minutes or until golden brown.
  7. Makes 18 muffins.

Is there an adjustment needed for higher elevation? I live in Denver and haven't figured out the cake baking yet. Thx

Hi Leora, When I lived in the mountains, I followed this: Adjustment for 5000 feet: Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon. Reduce sugar: for each cup, decrease 0 to 2 tablespoons. Increase liquid: for each cup, add 2 to 4 tablespoons. Increase oven temperature by 25 degrees F.
