White Chocolate Peppermint Poke Cake

For all of the white chocolate peppermint fans, you will love this simple to make poke cake. Only 4 ingredients are needed to make this wonderful cake. I’ve always been a huge fan of white chocolate. I don’t know about you, but white chocolate just seems so buttery. Plus, sometimes the caffeine in milk or dark chocolate will keep me up at night. But, by using white chocolate instead there is no worry about caffeine intake. 

I want you to know, that while this cake has a few steps to make, it’s so easy that even your children can get into the kitchen and help you bake. Children love to mix and stir and this is the perfect recipe for them to help with. Baking can be fun and educational!

What is a Jello Poke Cake

Jello Poke Cake is a fun name for a cake that it has Jello or Jello pudding all over the top. Poke cakes are very popular with the young-at-heart and make great treats to take to parties, potlucks, or just serve after dinner on special occasions.

Poke cakes are typically made with a cake mix, then have holes poked into it, then it is filled with either Jello gelatin or Jello pudding. It also uses Cool Whip instead of the more traditional whipped cream as the topping.

Do I have to use candy canes for the top of this poke cake recipe? 

Absolutely, not.  You can use any type of peppermint.  The round Starlight mints will work, as well as candy canes. You could also use Andes mints on the top if you want to add some chocolate taste to your cake. One of the best things about this poke cake recipe is that you can use whatever you desire. This poke cake recipe is so flexible that the options are endless.

Can I make this poke cake recipe ahead?

Yes! This cake can be assembled and chilled overnight before serving. Do not assemble more than 24 hours in advance or the cake may dry out. If you want to bake ahead be sure to seal or wrap your cake tightly before storing it in the fridge. 

If you have time with all of your Christmas cookie baking to fit this in, you will be so happy! Even my son who said he isn’t that crazy about Peppermint loved this cake, it is light and fluffy! If you love Peppermint, add Peppermint extract to the Cool Whip. Use the handle of a wooden spoon to poke holes all over the warm cake and then pour the pudding mixture on top of the cake. Spread it around and push it into the little holes you created. Refrigerate it until it’s chilled completely, top it with some cool whip and more of the peppermint chips!

Ingredients

  • 1 box of White Cake Mix
  • One box of White Chocolate Instant Pudding mix
  • 1 container Cool Whip
  • 12 Peppermint Candies

How to Make Jello Poke Cake 

Step 1. Prepare cake according to directions. Bake as directed and then allow to cool completely. 
Step 2. Prepare pudding according to directions.
Step 3. When the cake is completely cooled off, use a wooden spoon’s handle to poke holes in the cake.
Step 4. Pour pudding over cake, smooth top.
Step 5. Spread Cool Whip over Pudding, smooth top.
Step 7. While candies are wrapped, hit a couple of times with a mallet or hammer, and unwrap candies over the cake for decoration.
Step 8. Refrigerate the cake for 1 hour or until set.

The pudding-filled holes make this one super moist cake. It’s infused with peppermint and chocolate, which is absolutely heavenly.

TIPS FOR POKE CAKE:

  • You can use a cake made from scratch, a box cake, or a store-bought cake.
  • White cake pairs well with all flavors of jello
  • Add a layer of similar pie filling to the top of the cake then top that with whip cream. Such as strawberry jello with strawberry pie filling
  • For a nice clean slice, wipe the knife after each cut.

VARIATIONS & STORING

Can I make poke cupcakes 

Absolutely! Instead of making a 9×13 cake Make cupcakes according to the directions on the box. Once the cupcakes have cooled poke them with a fork or skewer, use a soup spoon to drizzle jello into the holes, and chill.

How do I store poke cake?

  • Refrigerate: Because of the pudding, keep the cake chilled. Tightly cover the cake and keep it in the fridge for 2-3 days.
  • Freeze: To freeze, wrap the cake with plastic wrap, then again with aluminum foil. Label and freeze for up to 3 months.
