Knock Your Socks Off Brownies

Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

This recipe uses a mix, but it really is the best brownie ever with a caramel middle and delicious nuts!

Ingredients

  • 1 box (18.5 Ounce) German Chocolate Cake Mix
  • 1 cup Finely Chopped Pecans (I ran out of pecans and used mostly walnuts)
  • 1/3 cup Evaporated Milk
  • 1/2 cup Evaporated Milk (additional)
  • 1/2 cup Butter, Melted
  • 60 Caramels, Unwrapped
  • 1/3 cup Semi-Sweet Chocolate Chips
  • 1/4 cup Powdered Sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together cake mix, chopped pecans, 1/3 cup evaporated milk, and melted butter.
  3. Stir together until totally combined.
  4. Mixture will be very thick.
  5. Press half the mixture into a well-greased 9 x 9 inch square baking pan.
  6. Bake for 8 to 10 minutes.
  7. Remove pan from oven and set aside.
  8. In a double boiler (or a heatproof bowl set over a saucepan of boiling water) melt caramels with additional 1/2 cup evaporated milk.
  9. When melted and combined, pour over brownie base. Sprinkle chocolate chips as evenly as you can over the caramel.
  10. Turn out remaining brownie dough on work surface.
  11. Use your hands to press it into a large square a little smaller than the pan.
  12. Use a spatula to remove it from the surface, then set it on top of the caramel and chocolate chips.
  13. Bake for 20 to 25 minutes.
  14. Remove from pan and allow to cool to room temperature, then cover and refrigerate for several hours.
  15. When ready to serve, generously sift powdered sugar over the surface of the brownies.
  16. Cut into either nine or twelve helpings, and carefully remove from the pan.

These are in the oven now and they smell amazing. I can't wait to try them! The only thing I would suggest to very basic bakers like myself, would be to use Pam to spray your fingers and work the mix. Mine was so thick and sticky. Once I sprayed my fingers, it was so much easier to work with. They just came out of oven, now to make myself wait :(

Has anyone tried melting the caramels & evaporated milk in the microwave? If so, at what level of power and for how long?? Thank you.

Faustina, You can melt them in a microwave safe bowl, I would try doing it on a couple minute increments, stirring in between. Nettie
