This one pot Quinoa side dish is so flavorful with lots of garlic and parmesan cheese and packed with protein. It can be on your plate in 20 minutes. Only 5 ingredients are needed for this packed full of flavor side!I love the lazy, stress-free days of summer. I lean towards recipes with a “no fuss- no muss” attitude, easy and not a lot of steps recipes. Summer cooking can be easy and fun. I feel like a block Party hero getting all of my summer needs at Sam’s Club. I want to be spending time with my friends and family and less time in the kitchen. Creamy Parmesan Garlic Quinoa is a delicious and easy side dish, perfect for a summer cookout!

Ingredients

  • 1 cup truRoots Quinoa
  • 1 3/4 Swanson Chicken Broth
  • 1 Tablespoon Extra Virgin Olive Oil
  • 3 cloves garlic, chopped
  • 1/2 Parmesan cheese, grated

Instructions

  1. With a sieve, rinse quinoa under running cold water. Drain. Set aside.
  2. In a sauce pan, add olive oil over medium heat. Add chopped garlic. Saute until golden brown. Happens quickly!
  3. Add quinoa, let toast for about 1 minute.
  4. Add chicken broth, raise heat to high, when it comes to a boil, cover with a lid and lower heat to medium, cook until most of liquid absorbs and quinoa is soft, for about 15 minutes.
  5. Stir in grated parmesan cheese. Serve warm.
