Only 5 ingredients are needed for this packed full of flavor side!I love the lazy, stress-free days of summer. I lean towards recipes with a “no fuss- no muss” attitude, easy and not a lot of steps recipes. Summer cooking can be easy and fun. Everyone migrates outside for the longer days, planning lots of potlucks and block parties with our neighbors and friends during the summer. I feel like a block Party hero getting all of my summer needs at Sam’s Club. I want to be spending time with my friends and family and less time in the kitchen. That’s why I created this simple recipe.

What you will need to make this recipe: truRoots Quinoa, Swanson Chicken Broth, Extra Virgin Olive Oil, Grated Parmesan Cheese, garlic.Rinse truRoots Quinoa in a fine mesh sieve under cold running water. Drain water. Set aside.Chop up garlic.In a saucepan, add olive oil and garlic, on medium heat, saute garlic until golden brown.Add truRoots Quinoa, toast for 1 minute over medium heat.Slowly pour in Swanson Chicken Broth, bring to a boil, lower heat to medium, cover with a lid.Cook for 15 minutes. Add parmesan cheese.Stir in cheese.Serve quinoa as your favorite BBQ side.
- 1 cup truRoots Quinoa
- 1¾ Swanson Chicken Broth
- 1 Tablespoon Extra Virgin Olive Oil
- 3 cloves garlic, chopped
- ½ Parmesan cheese, grated
- With a sieve, rinse quinoa under running cold water. Drain. Set aside.
- In a sauce pan, add olive oil over medium heat. Add chopped garlic. Saute until golden brown. Happens quickly!
- Add quinoa, let toast for about 1 minute.
- Add chicken broth, raise heat to high, when it comes to a boil, cover with a lid and lower heat to medium, cook until most of liquid absorbs and quinoa is soft, for about 15 minutes.
- Stir in grated parmesan cheese. Serve warm.
