20-Minute Baked Pasta Alfredo with Sausage

Ingredients

  • 1 (14 ounces) package Eckrich Cheddar Smoked Sausage
  • 1/2 onion diced fine
  • 2 Tablespoons butter
  • 2 cloves garlic, crushed
  • 1 cup heavy cream
  • 1 1/2 cups grated Parmigiano Reggiano
  • 1/2 teaspoon crushed red chilies
  • 8 oz fresh mozzarella in water - drained and cut into 1/2 inch squares
  • 1 lb conchiglie or other similar shell pasta

Instructions

  1. Pre-heat oven to 350 F.
  2. Position the top rack to about 8 inches from the broiler.
  3. Fill a large pot with water, bring to a boil.
  4. Melt butter in a 10-inch iron skillet or oven-proof frying pan large enough to hold all of the pasta.
  5. Cook onions over medium-low heat until soft, about 5 minutes.
  6. Add the dried pasta to the boiling water.
  7. Cut sausage into 4 chunks. Sauté in the pan for a couple minutes, turning often.
  8. Add garlic and cook another minute.
  9. Add cream and heat through. Stir in half of the Parmigiano Reggiano to melt.
  10. Turn the heat to low.
  11. When pasta is al dente (10 minutes) drain the pasta.
  12. Return the pasta to the pot and mix in the sausage Alfredo sauce thoroughly.
  13. Return the pasta and sauce to the iron skillet.
  14. Sprinkle remaining Parmesan and the fresh mozzarella over the top and place in the oven on the high rack.
  15. Bake for about 10-12 minutes then set the oven to broil. Keep an eye on it, browns quickly.
  16. Let stand for about 10 minutes and serve as you would any baked pasta. Using a large spoon scoop it out.
  17. Serve immediately.
