To lighten up my recipe, I replaced the dried herbs with fresh herbs and I used fresh squeezed lime juice in place of bottled juice. I also used Mazola Corn Oil instead of Olive Oil.

Flank steak is actually one of my favorite cuts. I’ve been eating it for years, and it’s just perfect in a flavorful marinade like this one. Super simple to make, gluten-free, and fits into the paleo diet! The best part is it packs a huge punch of flavor!

So delicious and so simple! It tastes fresh and is perfect and easy enough for normal family dinner or a bigger dinner party! 

This recipe screams summer grilling, and it’s one that family and friends will all love. We had family over the other night and I made this incredible steak. It was gone in seconds! Next time, I will double this recipe for sure! 

I’ve decided that the key to a really great flank steak is marinating it in something delicious for at least a few hours. 

When grilling with other cooking oils, meat tends to catch on fire and gets a very charred and overpowering flavor, but with Mazola, it has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. Many home cooks, like myself, may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor but also the nutritional value.

That’s why I am excited about summer grilling and less indoor cooking in our home. I love the fresh flavors of marinated beef; the charred crispy edges are my favorite. Hubs loves his steak rare. I like mine medium-well. For this size steak, I grilled it for 4 minutes on high for each side.

Once the steak comes off the grill, let it rest for about ten minutes to lock in the flavors. Then slice the steak and spoon the chipotle sauce over it and sprinkle chopped cilantro, too.

If you are a steak lover like my family, you will love this incredible marinated grilled steak. Marinate the steak for at least 2 hours. If you can marinate it overnight, even better.

prep time: 1 DAY cook time: 4 minutes total time: 1 day 4 MINUTES Grilled Chipotle Flank Steak is marinated for hours with an easy and delicious marinade and then grilled to perfection. The steak has so much flavor from a marinade of lime juice, cilantro, chipotle peppers, and garlic.

Ingredients

  • 1/2 cup Mazola Corn Oil
  • 1/4 cup lime juice
  • 1/3 cup loosely packed cilantro leaves
  • 4 chipotle peppers in adobo sauce, chopped
  • 2 tablespoons adobo sauce
  • 1 tablespoon white vinegar
  • 3 cloves garlic
  • 1 (2 1/2-pound) flank steak
  • salt and pepper

Instructions

  1. Add all of the ingredients except the steak to a blender and blend until smooth.
  2. Pour into a large plastic bag. Add flank steak, coating it well. Seal and refrigerate for at least 2 hours and up to 24 hours.
  3. Let flank steak sit at room temperature for 30 minutes before grilling.
  4. Pour marinade into a small saucepan. Boil for 5 minutes, stirring occasionally so it doesn’t burn on the bottom.
  5. Season flank steak with salt and pepper.
  6. Grill for about 4 minutes per side, or until the desired degree of being done. Drizzle marinade over steak and let it rest for 5-10 minutes. Slice thinly against the grain.
  7. Drizzle marinade over steak when serving, sprinkle with cilantro leaves for color. Serve with Garlic Mashed Potatoes or Cauliflower.
