This recipe serves 8 people, but feel free to double up the ingredients for more meals throughout the week.

Everyone needs to know how to put together a classic bacon broccoli salad. It’s so easy to whip up and tends to be a hit with most people! This recipe can be made all year round and it’s the perfect option for potlucks!

Broccoli Bacon Salad

Ingredients in Broccoli Salad

  • Broccoli – use the fresh florets, chopped very small
  • Red onion – finely diced
  • Pepitas – roasted
  • Cheddar cheese – cubed
  • Bacon – cooked and then crumbled into small pieces
  • Mayonnaise – use full-fat mayo
  • Powdered Sweetener –  use Splenda or your favorite no sugar sweetener to make it low carb
  • White vinegar – you can also try using cider vinegar for a unique taste
  • salt and pepper– to taste

How to make Broccoli Salad

  • Place all of the salad ingredients into a medium-sized bowl.
  • Prepare the dressing by mixing the mayonnaise, sugar, and vinegar together until smooth. Stir into the salad ingredients.
  • Cover the bowl and let the salad chill – I like to let it chill overnight and then bring it to the potluck.
  • Serve cold.

I think you’ll agree that broccoli salads are wonderful as a main course or as a side for any meal. You can always make a double batch to munch on throughout the week (it packs up great for those days you need to eat lunch on the go) or serve it to a group if you feel like sharing. 

HOW TO MAKE IT 

I like to first get all my ingredients together. You don’t want to start mixing and then realize you never cooked your bacon, etc. That would be a disaster! So, chop up the broccoli (I like smaller pieces, but you can cut it however you like), cooking and dicing up the bacon, cutting the onion, and measuring out the roasted pepitas and cheddar cheese cubes. Once that’s done, add all of those ingredients together in a large bowl.

Every single ingredient in this recipe is doing a job. There are no fillers in this broccoli salad, and the ingredients list is really just a big list of my all-time favorite foods, all perfectly mixed-up in one bowl.

I really like making this broccoli salad with bacon and cheddar as a potluck dish because it’s so pretty and colorful.

It’s also great for carry-ins because it’s not prone to get soggy in a hurry. When I’m transporting this dish, I sometimes put my crumbled bacon in a plastic bag and them mix it in right before serving so it’s as crispy as possible.

Pour the dressing over all of the ingredients in a bowl.

Mix well, making sure that everything is covered completely with the dressing.

This is the Best Broccoli Bacon Salad ever! Fresh ingredients make this best broccoli salad perfect as a main course or side salad for any meal. It’s keto/low carb too!

Ingredients

  • 5 cups fresh broccoli florets, cut into small floret pieces
  • 1 cup cooked and crumbled bacon
  • ½ cup roasted pepitas
  • 1 cup small cheddar cubes
  • ¼ cup chopped red onion
  • For the dressing:
  • ¾ cup mayonnaise
  • ¼ cup powdered sweetener
  • 1 tablespoon white vinegar
  • salt and pepper, to taste

Instructions

  1. In a large bowl, toss together the broccoli, bacon, pepitas, cheese, and onion.
  2. In a jar with lid or bowl, shake (or whisk) together with the ingredients for the dressing. Pour over salad. Toss salad until everything is completely coated.
  3. Store in an airtight container in the refrigerator for one hour to overnight. Best eaten within 3 days.

Notes

Let sit overnight in the refrigerator for the best flavors.
