What are crinkle cookies?

The cracks and splits on top of a cookie bite are called crinkles. To achieve this look, the cookie bites are rolled in powdered sugar before their session in the oven. The crinkles form from the rise of the cookies as they are heated and baked in the oven. The white of the sugar offers a contrast in color from the dark brown of the cookie bite batter which emphasizes the crinkled texture. So pretty!

What ingredients do I need to make these brownie crinkle bites?

¾ cup unsweetened cocoa powder

¾ cup of sugar

¾ cup packed light brown sugar

½ cup salted butter, melted

3 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 ½ teaspoons baking powder

1 cup powdered sugar for rolling bites

How do I make these brownie crinkle bites?

Preheat your oven to 375 degrees.

Using a mixer or a stand mixer, cream together the melted butter, sugars, and cocoa powder.

Once combined, mix in the eggs and vanilla.

While mixing, add in the flour and baking powder to the dough, until all ingredients are well combined. Note: the dough will be thick so you may want to use the paddle attachment if using a stand mixer; otherwise you may want to mix by hand using a spatula or a large mixing spoon.

Using a small portion scoop, scoop out the dough into ball shapes.

Gently roll each ball into the powdered sugar so that the entire brownie bite is covered with the sugar.

Place on a baking sheet, leaving a small amount of room between the bites for them to spread. They won’t spread much, but you don’t want them to touch.

Bake for 10 minutes. Let the brownies stand on the pan for a minute or two before transferring them to a cooling rack or eating.

Keep these brownie crinkle bites in an airtight container on your counter or in the fridge for 3-4 days.

Can I freeze these brownie crinkle bites?

The unbaked cookie dough bites are freezer friendly, but not the baked cookies. Here’s why: the baked cookie contains all that powdered sugar that makes the crinkles so appealing. If you freeze the baked crinkle bites, the powdered sugar turns into a glob of white coating on top of the bites. Of course, they’ll still taste amazing, but sadly, you’ll no longer be able to call them crinkle bites because, well, the crinkles won’t be evident.

The best thing is to freeze the unbaked cookie bites before you’ve rolled them in powdered sugar. Just roll the dough into bites and place them on a baking tray and in the freezer for a few hours until they’re solid. Transfer the bites to a freezer-friendly bag. They will keep in the freezer for up to 2 months.

When you’re ready to bake them, roll the brownie bites in powdered sugar, place them on a lined baking sheet and let them come to room temperature before baking them.

Tips for making these brownie crinkle bites

  • To keep the powdered sugar from absorbing into the dough once you’ve rolled them, coat the brownie bites in granulated sugar first, then roll them in powdered sugar. The crinkles will be more evident after baking.
  • Of course, the rich chocolate brownie flavor is amazing, but you can also make them even more festive by swapping out the extract flavors. For example, to make chocolate peppermint crinkle cookies, just substitute the vanilla extract with peppermint extract. Awesome!

Ingredients

  • ¾ cup unsweetened cocoa powder
  • ¾ cup of sugar
  • ¾ cup packed light brown sugar
  • ½ cup salted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 cup powdered sugar for rolling bites

  2. Mix using a medium to large bowl, or kitchen aid mixer,  combine cocoa powder, sugars, and melted butter. Once that is well combined, add in eggs and vanilla.
  3. While mixing, add in flour and baking powder to the dough, until all ingredients are well combined.
  4. The dough will be thick, similar to cookie dough. (So if using a stand mixer, use the paddle attachment. If mixing in a bowl, use a rubber  spatula or large mixing spoon, and mix by hand)

Notes

One cup of powdered sugar is more than enough. If you want to save time and not roll each brownie, you can sprinkle the sugar on top before you bake them. 

This recipe makes two dozen. I use a small portion scoop that is 1 3/4 inches. 

These little bites are a family favorite and you can’t seem to stop with just one bite!

How much butter - it says 1/2 ? Thanks

1/2 cup salted butter, melted. I usually use salted butter so if unsalted is used, add 1/4 tsp salt to the recipe as an alternative.
