This moist and delicious Carrot Banana Bundt Cake is by far the easiest recipe, it’s also perfect for using up bananas which are getting too ripe as it makes the cake a little sweeter and so moist and flavorsome, it’ll keep for a couple of days.

Moist Carrot Banana Bundt Cake

I know, I know… I can’t stand the word “moist” but there really isn’t another word that I can think of at the moment to describe the inside of this beautiful cake.

Best Carrot Banana Bundt Cake Recipe

Grab a cup of coffee and a slice of your carrot banana cake and pat yourself on the back for what is now what you may consider the BEST Carrot Banana Cake Recipe.

In a large bowl combine flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl cream together sugar, vegetable oil, and eggs.

Add wet ingredients to dry ingredients and mix until well combined.

Then in order to add the carrots, banana, and pineapple.

Pour into greased bundt pan.

Bake at 350 about 40-45 mins until toothpick comes out clean.

 

Make the frosting:

Drizzle frosting over bundt cake.

Carrot Banana Bundt Cake

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 cup sugar
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 cup grated carrots, about 2 medium
  • 2 ripe bananas, mashed
  • 1/2 cup crushed pineapple
  • For glaze:
  • 1 cup powdered sugar
  • 4 oz cream cheese room temperature
  • 1/4 cups butter softened
  • 1 tsp vanilla

Instructions

    For the Cake:
    1. In a large bowl combine flour, baking powder, baking soda, salt, and cinnamon.
    2. In a separate bowl cream together sugar, vegetable oil, and eggs.
    3. Add wet ingredients to dry ingredients and mix until well combined.
    4. Then in order to add the carrots, banana, and pineapple.
    5. Pour into greased bundt pan.
    6. Bake at 350 about 40-45 mins until toothpick comes out clean.

For Glaze:

Combine all ingredients and mix.

Microwave until pourable.

Drizzle over warm cake.
