You will be so happy that you did. Because for me, Christmas = Gingerbread. Christmas is coming up and these easy gingerbread bars will make your home smell completely divine as guests come and go, not to mention put you in a completely festive holiday state of mind.

They’re thick with a subtle molasses flavor and will make your house smell just like Christmas morning when you bake them.

They are perfect for the holidays or to take to friends and neighbor’s houses!

I think I am totally obsessed! Please take them before a nibble here and a nibble there, they will be gone, but let me tell you they sure are amazing for breakfast with my dark roast coffee! While hubs is decorating the house with the thousands of Christmas lights, I have the Hallmark channel on playing Christmas movies, it is pure bliss!

When I made these easy gingerbread bars, I was surprised how quickly they disappeared at our house. The kids invited their friends over and everyone was sharing them amongst themselves!

You still get that familiar taste of ginger, cloves, and cinnamon with a little bit of something extra — that you can’t put your finger on, but you love it.

My mom has been making these Gingerbread bars during the holidays for years, and even though she always sends me some in the mail, I like to have them baking in the oven sometimes as well.

Here is what you need to make these yummy Easy Gingerbread Bars:

Beat together sugar, butter, and molasses.

Beat in egg and milk until fully combined.

Beat in flour, baking soda, nutmeg, and ginger.

Line a square 8×8 or 9×9 inch pan with parchment and spray lightly with nonstick.

Spread batter in the pan, and bake at 350 for 20-25 minutes, and let cool.

While cooling, beat together cream cheese, butter, powdered sugar, and milk until
blended. Spread over gingerbread, cut them into squares, and serve.

How long do Gingerbread Bars Last?

Place in a Tupperware and put it in the refrigerator. It should last for a week.

How to freeze Gingerbread Bars:

Layer the bars in a single layer inside a gallon size bag. You’ll probably fit about 8-10 bars to a layer (depending on size). Place a paper towel on top (inside the bag) and add another layer. I find that three layers are as many as will fit, and each layer will hold fewer bars, so you may need more than one bag. Seal and freeze.

To defrost: Let them set on the counter to come to room temperature. Don’t remove the paper towel, that will absorb the moisture as they thaw.
