Lo Carb Macaroons

Easy Lo Carb dessert! Chocolate macaroon without all of the guilt!
Ingredients
  • 1¼ cup almond meal
  • ¼ cup unsweetened dark chocolate, chopped
  • ½ cup unsweetened coconut
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ⅓ cup Xylitol
  • 1 egg
  • 3 Tbsp Coconut Oil
  • ½ tsp Vanilla Extract
Instructions
  1. In a large mixing bowl, stir together almond meal, chocolate, coconut, baking powder, salt and Xylitol.
  2. In a separate bowl, beat egg.
  3. Whisk in coconut oil and vanilla.
  4. Add to dry ingredients, mix until just combined.
  5. Place in refrigerator for ½ hour.
  6. Preheat oven to 375 degrees F.
  7. Shape dough into 1 ' balls and place on lined baking sheet, with 1½ inches of space between cookies.
  8. Press down slightly.
  9. Bake until edges are brown, 7-10 minutes.
  10. Remove from oven and let cool.
  11. Makes 25 cookies
