Best Stuffed Peppers

Serves: 6 peppers
Stuffed peppers with a perfect blend of beef, sausage, rice and veggies.
  • 1 pound ground beef
  • 1 pound Sweet Italian Sausage
  • 6 peppers ( any color)
  • 3 cloves garlic, pressed
  • 1 onion, chopped
  • 2 cups cooked Basmati Rice
  • 1 can Mild Rotel
  • 1 can Diced Tomatoes
  • 3 cups Cheddar Cheese, shredded
  • 2 Tablespoons fresh Parsley, chopped
  • ½ teaspoon Kosher Salt
  • ½ teaspoon freshly ground pepper
  • EVOO
  1. In a large skillet, saute onion and garlic in oil.
  2. Add sausage and beef, brown, drain fat.
  3. Add rice and parsley.
  4. Stir in Rotel and tomatoes and ½ cup cheese.
  5. Season with salt and pepper.
  6. Cut off tops of peppers and the scraps of peppers.
  7. Place peppers in baking dish, stuff them until they are full.
  8. Drizzle Olive Oil over peppers.
  9. Cover with foil and bake at 375 degrees for about 40 minutes.
  10. Remove peppers from oven and remove foil.
  11. Use remaining shredded cheese on top of peppers, bake uncovered for another 15 minutes until bubbly and golden brown.
