Bud's Best Cookies 'N Cream Cheesecake Bars

Only 7 ingredients needed to make a quick easy dessert! Creamy Cheesecake Bars with cookie chunks and a Cookie Crust!
  • CRUST:
  • 12 ounces Bud's Bite Size Caco Chocolate Cookies
  • 1 stick butter, melted
  • Two 8 ounce packages of Cream Cheese
  • 1 cup Sugar
  • 3 Eggs
  • ¼ cup sour cream
  • 2 Tsp Vanilla
  • 12 Bud's Bite Size Caco Chocolate Cookies, chopped
  1. Preheat oven to 325 degrees Farenheit.
  2. Line a 10x10 baking pan with aluminum foil, leave overhang on all sides.
  3. Add 12 ounces Bud's Bite Size Caco Chocolate Cookies to a food processor or ziploc bag to crush.
  4. Add melted butter and mix well.
  5. Add to prepared pan.
  6. Press firmly to line bottom completely.
  7. Bake 10 minutes.
  8. Add cream cheese, sugar, and vanilla to a medium sized bowl or stand mixer, mix until smooth.
  9. Add eggs one at a time, blend well.
  10. Add sour cream, beat until incorporated.
  11. Fold in chopped Bud's Bite Size Caco Chocolate Cookies.
  12. Pour mixture over crust.
  13. Bake for 30 minutes or until center of cheesecake is almost set.
  14. Cool on rack for 2 hours.
  15. Cover with plastic wrap and refrigerate for 2 hours.
