I can’t believe it has taken me this long to finally create the perfect low-carb biscuit! I have tried so many biscuits that are flavorless and taste like wood chips. I was thrilled when I took my first bite of this incredible biscuit, it is so flavorful and melts in your mouth.

Make sure to slather your biscuit with butter!

It really tastes like a buttery biscuit! Not like the hard hockey puck biscuits that bakeries try to sell. No flour is needed for this incredibly delicious melt-in-your-mouth biscuit! I have tried many recipes in hopes of finding one that matched my Grandma’s biscuits, these are the best, yes, they are that good!

The cheese and the garlic puts the flavor over the top!

Since we are having such a cold spring, I’m really in a comfort food mode. My favorite top 5 comfort food is biscuits. I think that I will have to make another batch to go with my Ham and Bean Soup that I made today.

I’m thinking of making a batch of biscuits may be the thing to do. They’re simple and familiar and remind me of all of the good times with family. Serve these delicious biscuits with a big bowl of soup or stew, or serve them with an omelet.

I’ve had no problem storing these low-carb biscuits in the refrigerator for a week. You can warm them up in the microwave or oven right before serving. They also freeze well, so you could even make a few batches to have on hand for a long time. You can’t go wrong with that.

This recipe makes 12 biscuits, I used my favorite baking pan and they turned out perfectly golden brown.

Almond flour is blanched and finely ground. It creates a better texture in baked goods. Next time I will add a Pepper Jack Cheese.

 

Combine all of the dry ingredients. Use a fork to break up the clumps.

Beat the eggs.

Add the sour cream to the beaten eggs.

Add melted butter.

Mix all of the wet ingredients together.

Add the wet ingredients to the dry ingredients.

Use a silicone spatula to combine the biscuit mixture.

Shred some cheddar cheese.

Add the cheese to the biscuit mixture.

Add a spoonful of biscuit mixture into a prepared cupcake baking pan.

Bake for 10-12 minutes.

  1. Gather all of the ingredients.
  2. Preheat oven to 400 degrees Fahrenheit.
  3. Spray muffin pan.
  4. Combine all of the dry ingredients.
  5. Use a fork to break up the clumps.
  6. Combine all of the wet ingredients into the dry ingredients and mix.
  7. Add cheese.
  8. Bake for 10-12 minutes and golden brown.

Notes

These were great! I am always disappointed in the results of low carb biscuits and bread recipes but these were delicious. I made them exactly as written (I did, however, bake them in silicone liners), slathered some butter on them right out of the oven and I believe my eyes rolled back in my head. Sharing with my low carb friends and adding them to my list of go-to's. Will try different cheese and herbs next time.

Excellent. I’ve made them several times changing up the add ins each time. Next time I’m going to add pepper Jack cheese. I made these today with white cheddar cheese,, Italian seasoning and minced garlic. They turned out perfectly and I’ll serve them as well as sweet cornbread for our Christmas dinner. They are light, fluffy and moist😋.

My recipe nutrition calculator shows 149 calories per biscuit. How do you come up with such a low number.

I just updated the calorie count, with my recipe making 12 biscuits, they come out to be 105 calories per biscuit.

Tried these today. No sour cream so used Philadelphia instead, also added extra cheese and some mixed herbs
