The easiest, most flavorful slow cooker mashed potatoes that you will ever make! My kids always request mashed potatoes for special occasions and holiday events. I wanted to have the mashed potatoes all done and ready while my other side dishes were cooking.

I love that these are the easiest, most delicious mashed potatoes that I have ever eaten. I will never go back to boiling potatoes again!

A while back, I reviewed a wonderful cookbook written by my friend Sarah, ” The Magical Slow Cooker”. I have made many recipes from her cookbook that are just so easy and delicious. This was a favorite, Slow Cooker Sour Cream Beef Stroganoff and one of my most viewed recipes!

Chicken is a main staple in our household, hubs would be happy to eat it every day of the week. This slow cooker lemon chicken is so moist and lemony, I should have doubled up the recipe, because everyone was going back for seconds. Broiling the chicken after it has cooked low and slow gives it such a beautiful golden brown color. I even ate the lemon, it was amazingly delicious.

Slow Cooker Pork Chops

Using the Slow Cooker is a fantastic idea when you have a package of chops and a bowl of veggies. Pork chops come out so tender and fall apart. They are full of so much flavor. Serve over Couscous or Rice. I used a package of 6 thin Pork Chops. Hubs could eat two with no problem, great for leftovers the next day!

Slow Cooker Pork Chops

Easy and delicious pork chops cooked in the slow cooker with red peppers and onions, served over couscous.

Ingredients

1 package of 6 thin pork chops
1 large onion, chopped
1 large red pepper, chopped
1 package mini Portobella Mushrooms, sliced
½ cup Chicken Broth or water
½ Tbsp Lawry's Seasoned Salt
½ Tbsp Fresh Ground Pepper
1 tsp dried Oregano
1 tsp Garlic Powder

Instructions

In a Slow Cooker, place pork chops, veggies, seasonings and broth.
Cook for 6-8 hours on Low or 4-5 hours on High.
Serve over Couscous or rice.

When your oven is being used baking cookies, this is a wonderful recipe for a tender moist ham. I made a 6.5 pound ham with this recipe. It was delicious!

Everything you want in a ham, it’s salty and sweet, very juicy and firm.

In a slow cooker, cook ham for 6 hours on low, during the last hour, add the brown sugar glaze. Transfer ham into a baking pan, uncovered, into the oven at 400 degrees F for 20 minutes until browned.

This zippy ham begs to be served with creamy sides (from mac and cheese to green bean casserole).

Pair it with mustard and pickled vegetables for a southern charcuterie platter.

When your oven is being used, make this delicious slow cooker ham! Perfect for your Christmas Supper!

Ingredients

1 fully cooked 6.5 pounds ham, scored ( bone-in works great as well)
½ cup water
1 cup brown sugar
¼ cup honey
¼ cup spicy brown mustard
¼ cup maple syrup

Instructions

In a slow cooker, place ham and water, set on Low for 6 hours.
During the last hour add the brown sugar glaze.
Brown Sugar Glaze: Mix brown sugar, honey, mustard and maple syrup in a bowl with a whisk.
Place ham in baking pan uncovered for 20 minutes at 400 degrees Fahrenheit, or until ham is browned.

SLOW COOKER POT ROAST

Hubs just loves pot roast. If we are at a restaurant and it is on the menu, he will order it.

I always thought it was so complicated to make and would be dried out. This recipe is far from being complicated and the meat is moist and tender.

The great thing is you can use your slow cooker and set it and forget it. Just wait until your family walks through the door, your house smells so great!

For this recipe you don’t want a very expensive cut of meat, let your slow cooker do all the work. Cooking it slowly breaks down the meat and makes it fall apart and juicy. I chose a Chuck Roast, it was on sale. But you can choose your favorite cut of meat.

Add veggies in the last 1 1/2 hours of cooking the pot roast. Serve over mashed potatoes.

SLOW COOKER POT ROAST

Prep Time: 10 minutes

Cook Time: 10 hours

Total Time: 10 hours, 10 minutes

Yield: serves 4

Serving Size: 2 slices

Ingredients

3 pound Chuck Roast
1 envelope Lipton Onion Soup Mix
3 carrots sliced
3 celery stalks, sliced
1 onion, chopped
2 cloves garlic
1 cup water

Instructions

Place beef pot roast in slow cooker and sprinkle with Lipton onion soup mix and garlic.Pour water over pot roast. Cook on low 8 to 10 hrs or until tender. Add carrots and celery during the last 1 1/2 hours. Take out pot roast and veggies, serve on platter. Reserve juices.
For Gravy:
In a small saucepan, add two tablespoons butter, melt, add 1 tbsp flour, stir until golden brown. add juices from roast, stir until thick. Pour over pot roast. Serve hot.

With summer here, no one wants their oven on all day, challenges of a food blogger who loves to bake!

I fell in love with our local cheese shop, I had to try everything and even picked up a beautiful pancetta end. A delicious “SAUCE” entertained my thoughts…..but I knew it had to be made in my Slow Cooker for low and slow flavors. Our farmers market has incredible choices of sausages in the summer. We tasted all of the many flavors and chose the Veal Italian sausage. I also had a package of spicy sausage, lucky me. The flavors were starting to come together, now for veggies. Roast them in your oven in the morning, along with the sausages when the weather is still cool, well it is in Maine… they were giving away garlic scapes at my favorite farm stand, so I had to add them.

So this sauce is even better the next day, you will want to bathe in, yes it’s that good, something like the pasta those cute waiters will serve you in Florence, with their sweet smiles, knowing you have no idea what they are saying, but it doesn’t matter because they are serving a gorgeous pasta dish that even your Italian Grandmother would be proud of you for making. Love you Grandma Frances.

Ingredients

1 Pancetta end
1 package Veal Italian Sausage
1 package Spicy Sausage
1 large Vidalia Onion sliced
4 large tomatoes
1 jar Pasta Sauce~ Silver Palate
1 container Chicken Stock
Olive Oil
1 package Ziti Pasta
garlic scapes
Fresh Grated Parmesan~ 1 cup
Mozzarella~ 2 cups shredded

Directions

Preheat oven to 400 degrees. Cover baking sheet with foil, place sausages on sheet, bake until brown, (flip after 10 minutes to other side)
In a bowl, toss veggies with a couple TBSP Olive Oil. On a separate baking sheet roast veggies, onions, tomatoes, garlic scapes until soft and tender.
Add sausages, pancetta, Sauce, Chicken Stock and veggies to Crock Pot. Cook on low 7-8 hours of on Low for 4-5 hours. Remove scapes and pancetta end.
Cook Ziti pasta as directed.
In a glass baking dish, spray with PAM, add pasta, 2-3 cups of sauce ( make sure pasta is all covered), Parmesan Cheese and Mozzarella Cheese. Bake at 400 degrees for 15-20 minutes or until brown and bubbly.
Serve with extra Parmesan Cheese and fresh basil, my yummy garlic bread, salad, and a bottle of Chianti! Bon Apetito! Nettie <3
