Ingredients Needed

Stew Beef – tougher (and more budget-friendly cuts) such as flank, tenderloin, rib eye, and sirloin work beautifully in the slow cooker and become tender the longer they cook.
Beef Broth – needed to flavor and cook the beef tip in and help make the gravy.
French Onion Soup – use canned. It helps flavor the beef and gravy.
Worcestershire Sauce – for flavor.
Minced Garlic – adds a punch of flavor.
Brown Gravy Mix – dried envelope mix. Use your favorite brand.
Ketchup – for flavor.
Cornstarch – needed to thicken the gravy.
Water – mix with the cornstarch to create the slurry for thickening the gravy.

How To Make Slow Cooker Beef Tips And Gravy

STEP 1: To your slow cooker add the stew beef, beef broth, french onion soup, Worcestershire sauce, minced garlic, brown gravy mix, and ketchup.
STEP 2: Stir everything together, cover, and cook on low for 6 hours or high for 4 hours.
STEP 3: Right before serving, whisk together the cornstarch and cold water and stir it into the beef tips to thicken.
STEP 4: Serve over mashed potatoes, rice, or egg noodles.

Do I Need To Sear The Beef First?

Technically, no you don’t, since it will be cooking for hours in the slow cooker. That said, if you have a few extra minutes and would like to sear them in a little olive oil in a skillet on the stove and drain off the oil before putting it in the slow cooker, you certainly can.

What’s The Best Beef To Use?

Since I’m cooking this low and slow in my crockpot, stew beef works wonderfully and is also budget-friendly. Flank, rib eye, tenderloin, and sirloin are well-suited to slow cooking. You don’t need the most tender cuts of beef since the slow cooker will break down and tenderize the meat.

Mix-Ins

The most popular mix-in to add to this already luscious meal is to add freshly sliced mushrooms to the ingredient list. If you love onions, you can also add freshly sliced onions, as well. Keep in mind, that there’s already a can of onion soup on the ingredient list, so additional onions will make it extra flavorful on the onion scale. Sweet onions won’t pack as much of a punch if you’re looking for more texture with a less prominent flavor.

How To Serve Slow Cooker Beef Tips and Gravy

The most popular way to enjoy this meal is to serve the beef tips and gravy over a starch like mashed potatoes, rice, or egg noodles.  Great sides to go with this meal would be my green bean casserole or my crunchy broccoli and bacon salad. Don’t forget bread, such as my tasty broccoli and cheddar cornbread or my cheesy garlic bread. Finish off this incredible meal with a sweet treat such as my easy no-bake Oreo cookie delight or a slice of my amazing sock-it-to-me cake.

Is This Meal Freezer Friendly?

Absolutely! Just make the beef tips and gravy and cool it completely before placing it in a freezer-safe airtight container. It will keep for up to 3 months. Be sure and leave some space in your container for expansion as it freezes.

Storage

To store in the refrigerator, place the cooled leftovers in an airtight container for up to 3 days. Reheat on the stovetop. For the freezer, place in a freezer-safe airtight container for up to 3 months. Thaw in the fridge overnight before reheating on the stovetop.

Ingredients

  • 2-3 pounds stew beef
  • 1 ½ cups beef broth
  • 10.5 ounces can French Onion Soup
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic minced
  • 1 envelope brown gravy mix
  • 2 tablespoons ketchup
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions
