Whenever I have a potluck to attend, a holiday gathering to go to with the family, or even a party that I am throwing, this Green Bean Cheddar Casserole recipe is my go-to dish. I know that when I make it, everyone is going to have a hearty scoop and enjoy it.

What is there not to love about this casserole? I have always been a fan of green beans so when I read this recipe, I knew that I would be a fan forever. I promise that this recipe will make you love green beans more than ever before. There are not any cream of anything soups in this recipe.

The recipe is great because it contains different vegetables that provide vitamins, nutrients, and antioxidants. You will need to have green beans to prepare this casserole, but you will also need to add some mushrooms and shallots. The mushrooms and shallots add even more flavor to the dish and give it that perfect consistency you would want to have in a casserole.

The vegetables added to the Green Bean Cheddar Casserole are topped with some of my favorite ingredients, including plenty of Cabot’s Seriously Sharp Cheddar. It is the only sharp cheddar that I will use for this recipe because it has such great flavor, and it melts perfectly over everything.

Easy Modifications You Can Make to the Green Bean Cheddar Casserole

The recipe calls for bread crumbs to get spread over your Green Bean Cheddar Casserole as a finishing touch. If you are all out of bread crumbs or you just do not like them, you can modify the recipe just a bit. Instead of using bread crumbs, you can use crushed butter crackers or crushed french fried onions.

Simply add them to a zipper-sealed bag, smash them with the bottom of a can, and spread them out over your dish. When I prepare this recipe, I like to use Italian seasoned bread crumbs, but I have used crushed french fried onions in the past and loved the extra flavor it added to the casserole dish.

Extra Ingredients to Add to the Green Bean Cheddar Casserole

Although this recipe is perfect just the way it is, you can also add a few extra ingredients to give it more of a unique taste. You may want to add bacon pieces to the baked beans and the creamy mushroom sauce to add a slight smoky bacon flavor to your dish. If you want to turn it into a dish that is even more filling, you can add chopped pieces of chicken breast in with your mixture as that extra protein source.

What to Prepare With Your Green Bean Cheddar Casserole

The Green Bean Cheddar Casserole dish is tasty and filling enough to serve for dinner without anything else. However, if you have a large family gathering or holiday dinner, you might want to know what to make with this casserole that will taste good. I have prepared some of the different foods with my Green Bean Cheddar Casserole, including roasted turkey, creamy mashed potatoes, and cranberry sauce.

The casserole also goes well as a side dish with different types of meat, such as steak and chicken. No matter what you have to eat with your casserole, the Green Bean Cheddar Casserole is the one option that everyone in the household is probably going to love the most.

After you make the Green Bean Cheddar Casserole, you can keep it fresh in the fridge for up to five days. You would need to place the casserole in a food storage container with an airtight lid before placing it in your fridge. If you want to save it for longer than five days, you will need to store your casserole in the freezer instead of the refrigerator. It will last for up to a month in your freezer, which means you have more than enough time to pull it out and reheat it when you have a craving for it.

HEAT 4 teaspoons of oil and butter in a large skillet over medium-high heat. Add shallots and cook until just starting to brown, 2 to 3 minutes. Green Bean Casseroles

Add mushrooms, thyme, salt and pepper, and cook, stirring occasionally until mushrooms have released their juices and liquid has evaporated, 3 to 4 minutes. Add sherry and cook, stirring occasionally until liquid has evaporated, 2 to 3 minutes.

BOIL several inches of water in a large saucepan fitted with a steamer. Add the green beans and steam until crisp-tender, about 4 minutes. Carefully remove the steamer from the saucepan to stop beans from cooking further. Place in a bowl of ice water.

SPRINKLE flour over the mushroom mixture and stir to coat. Add broth and milk and bring to simmer, stirring often, until sauce is thickened about 5 minutes.

REMOVE from heat and stir in 1 1/2 cups of Cabot cheddar. Add drained green beans and stir to combine. Transfer to the prepared baking dish. Top with remaining 1/2 cup of cheddar.

STIR together breadcrumbs and remaining 1/2 teaspoon of oil in a small bowl. Add paprika and onion powder and stir until breadcrumbs are evenly moist and bright orange. Sprinkle over casserole.

BAKE 20 to 25 minutes or until bubbling and golden brown on top. Let cool for about 15 minutes before serving.

Ingredients

  • Cooking spray
  • 6 cups green beans, trimmed and cut into 1-inch pieces (about 1½ pounds)
  • 4½ teaspoons extra-virgin olive oil, divided
  • 1 tablespoon Cabot Unsalted Butter
  • 3 shallots, minced
  • 8 ounces white mushrooms, finely chopped
  • 2 teaspoons chopped fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup dry sherry
  • ⅓ cup King Arthur Unbleached All-Purpose Flour
  • 1 cup reduced-sodium chicken or vegetable broth
  • 1 cup milk
  • 8 ounces Cabot Seriously Sharp Cheddar, grated (about 2 cups), divided
  • 3 tablespoons dry breadcrumbs
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
