Macaroni and cheese have always been one of my favorite foods. When I say macaroni and cheese, I am not referring to the stuff you can get in a box. Instead, I prefer having that homemade, freshly baked macaroni and cheese that is full of flavor and, of course, lots of cheese! I have finally mastered the perfect baked macaroni and cheese with this Best Macaroni and Cheese Casserole recipe. You will need to have several ingredients ready to use, most of which you probably already have in the kitchen, and about an hour of your time to prepare this meal.

Most kids love to eat the Best Macaroni and Cheese Casserole, so it is a dish that I will prepare at least once a week. The recipe makes enough for leftovers, which makes for excellent leftovers.

When you are following this recipe, it is important for you to use the Cabot Cheddar Cheese. I have tried a few other kinds of cheese in the past, and they just did not provide the same taste or consistency. Cabot Cheddar Cheese delivers the perfect amount of cheesy flavor, and it melts so perfectly with the rest of the ingredients.

In addition to the Cabot Cheddar Cheese, you want to add Parmesan cheese to the Best Macaroni and Cheese Casserole. You can choose any brand for the Parmesan cheese, but make sure it is grated beforehand. Some people do not mind grating fresh Parmesan cheese, but I will usually buy a bottle of pre-grated Parmesan cheese for this recipe.

I like making this recipe just the way it is, but I do realize that some modifications may be required based on dietary restrictions and preferences. For example, if you do not have breadcrumbs, you can replace them with something else, such as crushed corn flakes, crushed crackers, or even crushed croutons.

If you plan on using breadcrumbs like the original recipe, you can use any kind you prefer. I have used traditional, Italian, and panko bread breadcrumbs. Each of these options creates a crisp and bubbly topping for the Best Macaroni and Cheese Casserole.

If you cannot use all-purpose flour or do not have it, it is possible to substitute it with whole wheat flour, coconut flour, or even almond flour. The flour that you use may change the consistency of the Best Macaroni and Cheese Casserole slightly, but this is an option if you are unable to use all-purpose flour for any specific reason.

  • You can freeze the casserole for up to two months. When you want to heat a slice, you can add it to a microwave-safe plate and heat it for around 45-60 seconds or until completely warm. 
  • Add a sliver of butter to the top of the macaroni and cheese slice before you microwave it to keep it moist. 
  • If you are reheating the entire dish for leftovers, you can place the casserole dish back in the oven at 350 degrees F for about 15-20 minutes. 
  • Check the internal temperature to see how hot it is before removing it from the oven, slicing it, and serving it.

Ingredients

  • 16 ounces dry macaroni
  • ¼ cup Cabot unsalted butter
  • ¼ cup All-Purpose Flour
  • 1 ½ cups milk
  • 1 cup half and half
  • ½ teaspoon dry mustard powder
  • 1 teaspoon onion powder
  • 1 can cheddar soup 10.75 ounces
  • 4 cups grated Cabot Cheddar Cheese, divided
  • ½ cup Parmesan Cheese, grated
  • ½ cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Cook macaroni according to package directions. Drain and run under cold water.
  3. Melt butter over medium heat in a large saucepan. Whisk in flour and let cook for 2 minutes while stirring. Slowly whisk in half and half, milk, mustard powder, onion powder, salt, and pepper to taste. Cook over medium heat while stirring until thickened.
  4. Remove from heat and stir in parmesan cheese & 3 cups cheddar cheese until melted. Add cheddar soup.
  5. Toss cheese sauce & macaroni noodles together. Pour into a greased 9×13 pan. Top with bread crumbs and remaining cheese.
  6. Bake 18-24 minutes or until bubbly. Do not overcook. Cool 10-15 minutes before serving.
