If you’re wondering how your slow cooker is able to “stir fry” anything, don’t worry – you’re not missing a new gadget or setting! It’s just the name of this delicious recipe that takes all the flavors and ingredients that you would typically use when you’re stir-frying in a skillet or wok and transfers them to your slow cooker. The best part? There’s no standing over your stove to stir – you just add the savory ingredients to your slow cooker, turn it on, and walk away.

This slow cooker recipe is great for meal planning. Most of the ingredients are pantry staples, especially if you tend to like Asian-inspired recipes. That just leaves the beef. If I see a bargain at the grocery store on stir fry beef or a cut that I know I can use, I’ll purchase it with this recipe in mind.
The best shortcut is to use a frozen bag of stir fry veggies. That way, the only work you’ll need to do is mix the saucy ingredients that coat the strips of beef before adding everything else to your slow cooker. So simple!

Ingredients Needed:
Stir Fry Sliced Beef – If I cut my own, I usually use flank steak; otherwise, I purchase pre-cut stir fry steak.
Frozen Stir Fry Vegetables – Use your favorite packaged brand.
Homemade Asian Sauce – You’ll need cornstarch, minced garlic, brown sugar, soy sauce, sesame oil, ground ginger, crushed red pepper, and black pepper.
Sliced Green Onions – For a garnish on top when ready to serve.

How To Make Slow Cooker Beef Stir Fry:
STEP 1: Prepare a slow cooker with nonstick cooking spray.
STEP 2: Prepare the beef by placing the cut strips into a zip-top freezer bag with the cornstarch. Toss the beef to coat evenly and then transfer the beef to the slow cooker.
STEP 3: Prepare the sauce by mixing together, in a small bowl, the brown sugar, soy sauce, sesame oil, ginger, garlic, red pepper, and black pepper. Pour the mixture over the beef.
STEP 4: Top the beef with the frozen vegetables and season with salt, as desired.
STEP 5: Cover the slow cooker and cook on low for 4 to 6 hours or until the vegetables are tender.
STEP 6: Toss the vegetables with the beef and serve over rice or noodles. Garnish with sliced green onions.

What Type Of Beef Should I Use?
You can purchase stir fry steak that’s already cut, or cut your own. I tend to use either flank steak, skirt steak, or strip steak.
Tip: When I spot a sale on pre-cut, pre-packaged stir fry beef, I buy several and freeze them. That way, I can always have it available to make this slow cooker meal. I just thaw a package in the refrigerator overnight.

What Veggies Should I Use?
What I love about this recipe is that I just toss in a package of frozen stir fry vegetables. Depending on the brand you purchase, the veggies can differ. You can also certainly chop your own fresh veggies, too.
Typically I look for a package that contains broccoli, sugar snap peas, onions, carrots, water chestnuts, peppers, mushrooms, and baby corn.
The vegetables are versatile, though, so use whatever combination that you and your family tend to like.

How To Serve Slow Cooker Beef Stir Fry
I serve this Asian-inspired beef stir fry over white or brown rice. If I use noodles, I’ll go for either lo mein or rice noodles. If you’re watching your carb intake, it’s delicious over riced cauliflower, as well.

Tasty Garnishes:
For an authentic stir-fry experience, have sliced green onions and/or toasted sesame seeds ready to sprinkle on top. Toasted sesame seeds are much tastier and fragrant than plain ones. It takes less than 5 minutes to toast them in a skillet over medium heat. Just throw them in, watch carefully and use a spatula to move them around a little so they don’t burn. Take them off the heat and out of the skillet once they’ve turned a golden color and are tending toward brown. Delish!

Storage:
Leftovers (not mixed with rice or noodles) can be stored in the refrigerator in an airtight container for up to 3 days. Reheat on the stovetop. Serve over fresh noodles or rice.
