After I shared the recipe for Slow Cooker Mississippi Pot Roast two years ago, I had a lot of readers asking me about making it with chicken.
I love that this recipe works well with any kind of meat, such as beef, chicken, or pork. Come home to a delicious meal!
The chicken will produce its own juices so you don’t have to add any other liquid to this.
These are the only seasonings that you need.
Place the chicken in the slow cooker, add Ranch mix, Au Jus mix, Pepperoncini, and a stick of butter.
Simple and easy ingredients.
All ingredients are in the slow cooker, cover with a lid, and don’t peek!
Set your slow cooker at HIGH for 4 hours or at Low for 7-8 hours.
Oopsie, I did peek! Smells amazing!
In the finished product, look at all of the delicious juices. Just shred it up now with two forks!
Serve it over rice, noodles, or potatoes!
Juicy, flavorful chicken!
I just had to taste it before dinner! The great thing is that it’s such an easy recipe, plus its low carb! You can even serve it over riced cauliflower or zucchini zoodles! YUM!!

Hi Nettie, really enjoy your recipes. Mississippi Pot Roast is a family favorite. Question for your Mississippi Chicken....my family is not a fan of the dark meat of thighs. How does breast meat hold up for this recipe? Can it be substituted without being dry? Thanks and Happy New Year! Nikki

Hi Diana,
You can replace them with any pickled pepper you want. They really just add a very little bit of spiciness and some vinegar. I've made it with pickled banana peppers and didn't notice a difference. I'm thinking the "ranch" is what really makes the flavor plus a little hint of vinegar from the peppers.

I only have unsalted butter. Will that make a big difference in flavor?

Thanks for the chicken recipe Nettie. Do you not sear the chicken first before putting it into the crock pot ? I made your recipe for the pot roast which was a big hit with the family....gone in one day, and the recipe called for searing it first.

I don't have to sear the chicken before I put it in the slow cooker. I think because it's a smaller cut of meat so it's not necessary. Nettie
