I use Balsamic Glaze on my Eggplant Stacks….Thin sliced fresh eggplant, dipped in egg, dusted with Mesa and baked until crispy. They are layered into stacks alternating 4-5 slices of eggplant with thinly sliced avocado and Jersey tomatoes, fresh basil and fresh mozzarella. The balsamic glaze is drizzled over the tops of the stacks and run down sides….Incredible!!
