The ultimate “Fat Head” Pizza ~ Low Carb-You don’t have to go without pizza just because you are eating low carb or grain-free!
If you have been following me long enough, you may already know that I adore simple and low carb/keto recipes, so I am thrilled to share this Ultimate Fat Head Pizza~ Low Carb from my friend, Maria’s Mixing Bowl.
This is my favorite low carb pizza crust! Hands down!!! We’ve tried many keto pizza recipes in the past and this is by far the best low-carb keto-friendly pizza you can make. No more of that cauliflower pizza crust for me. I used to have to make that crust just for me while everyone else ate regular pizza. No more baby!!
This fathead pizza is so delicious and easy to make. My husband didn’t even know it was low carb. I had to tell him. It’s a win/ win for me. My best advice is to make this pizza and don’t tell anyone!! Then see what they say. Or what they don’t say. hahaha
Maria enjoys all kinds of food including low-carb dishes, recipe re-makes, family favorites, some recipes that she has been making since she was a child, recipes from her Mom’s recipe box, recipes that she makes over and over for her family, comfort foods and more. She likes to take recipes and re-make them by taking 3 or 4 recipes and putting what she likes from each of them together and coming up with one amazing dish.
With this pizza, you can eat it weekly and not tire of it or complain. Why? Because it tastes just like a real flour dough pizza
Rob, Maria’s husband is her kitchen helper and spends plenty of time in the kitchen as well. Especially since Maria became sick last year. It is their time together so this is his blog almost more than hers. Sometimes Maria just lets Rob take over and do his own thing. It’s always delicious. He has many talents so he should show them off!!
Rob and Maria not only love spending time in the kitchen but also love spending time in the beautiful state of Maine. That’s where I live! I hope that we can meet in person this summer! They enjoy spending time alone, taking long rides, and just doing nothing together. Pretty simple but that’s what they like.
Back to this Ultimate Fat Head Pizza! This also makes great little pita type bread. Just bake and then slice it carefully and you have bread for a sandwich. Best of all it tastes great!! This is going to be your new favorite way to make low carb pizza crust.
This pizza crust has been redone by every low carb out there. Because it is that good. It also makes a great bread for sandwiches. This pizza crust came from the original “Fathead Movie”

Ultimate “Fat Head” Pizza ~ Low Carb
You don’t have to go without pizza just because you are eating a Low Carb/Keto diet!

Kitchen tools: Parchment paper and cookie sheet
INGREDIENTS:
The Crust:
- 1 1/2 cups shredded mozzarella
- ¾ cup almond flour
- 2 oz cream cheese
- 1 egg
- Garlic powder
- Italian seasoning
The Toppings: - 1/4 c. Pizza Sauce
- Mozzarella Cheese
- Pepperoni
- Peppers
INSTRUCTIONS:
- Place mozzarella & cream cheese in a medium-size microwaveable bowl
- Microwave for 1 minute, stir and then another 30 sec, stir, this will be very hot
- Stir in egg, almond flour, garlic powder, and Italian seasoning
- Wet hands and spread “dough” thin on parchment paper. It should spread evenly with dough-like consistency (if
“stringy” then your cheese has hardened too much—just put it back in the microwave for maybe another 20
seconds) - Dock (poke rows of holes) with a fork to avoid bubbling
- Sprinkle with garlic salt
- Put in a 425-degree oven
- After about 8 minutes, check it and poke holes where any large bubbles may be
- Continue cooking for a total of 12-14 min, or until slightly brown on top
- Add toppings to crust. Put back in the oven until cheese is bubbly

I love this 'fathead' pizza crust recipe. I, too, don't care for the cauliflower 'crusts' that are out there. This sounds much more appetizing. Thanks for the recipe!
