In a bowl combine Cabot butter, brown sugar, egg, and molasses until smooth.

You will need to measure out the spices: Ginger, cinnamon, cloves, and salt.
In a bowl combine Cabot butter, brown sugar, egg, and molasses until smooth.
Add flour, baking soda, ginger, cinnamon, cloves, and salt until fully combined.
Roll dough into 1-inch balls and place in the pan.
Press thumb down in each cookie ball.
Let cookie cups cool completely before frosting on a cooling rack.
Make filling: mix the cream cheese, Dixie Crystal’s Confectioners sugar, vanilla, and cinnamon until fully combined.
Add a dollop of filling into each cookie cup and sprinkle with red and white sprinkles for Christmas.

Gingerbread Cookie Cups #ChristmasSweetsWeek

Ingredients
- 1/2 cup Cabot Creamery Butter
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup Molasses
- 2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- Filling
- 6 ounces cream cheese
- 2 cups Dixie Crystals Confectioners sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees and spray Vegetable Spray in a mini muffin pan.
- In a bowl combine Cabot butter, brown sugar, egg, and molasses until smooth.
- Add flour, baking soda, ginger, cinnamon, cloves and salt until fully combined.
- Roll in to 1-inch balls and place in the pan.
- Press thumb down in each cookie ball.
- Bake for 9 minutes (they will look under cooked, but you don't want them burnt).
- Let cookies cool completely before frosting on a cooling rack.
- For the filling, mix the cream cheese, powdered sugar, vanilla and cinnamon until fully combined.
- Add a dollop of filling on each cookie cup and sprinkle with red and white sprinkles for Christmas.
Notes

I like to try at least one new baked good each year. I make pignoli cookies for the holidays, we all look forward to them. We only have them once a year because not only are they are not cheap to make they are very rich, absolutely delicious though.
