No Bake Italian Cake has a creamy pineapple filling sandwiched between wafers and topped off with whipped topping and yummy coconut. This easy no-bake dessert will have them coming back for seconds! You won’t believe how simple this recipe is and really won’t believe how delicious it is. If you have been following me long enough, you may already know that I adore simple recipes, so I am thrilled to share this No-Bake Italian Cream Cake from Maria’s Mixing Bowl.

Rob, Maria’s husband is her kitchen helper and spends plenty of time in the kitchen as well.  Especially since Maria became sick last year. It is their time together so this is his blog almost more than hers. Sometimes Maria just lets Rob take over and do his own thing. It’s always delicious. He has many talents so he should show them off!! 

Rob and Maria not only love spending time in the kitchen but also love spending time in the beautiful state of Maine. That’s where I live! I hope that we can meet in person this summer! They enjoy spending time alone, taking long rides and just doing nothing together. Pretty simple but that’s what they like.

So, back to the recipe for the No-Bake Italian Cream Cake! The vanilla wafers did a fine job soaking up the pineapple and sweetened condensed milk mixture. It’s not so wet at all.

I’m not sure where the No Bake Italian Cake got its name. It’s not really an Italian dessert, but it doesn’t matter what you call this cake, it is really delicious.

If you’re not a fan of coconut, use chopped pecans instead. There isn’t a set amount for either just use as much or as little as you want.  Either way, this cake is delicious but I must say it is prettier with the coconut. Probably because the cherries stand out more.

 Make this No-Bake Italian Cream Cake today! 

This yummy Italian No Bake Cake is so simple! Vanilla wafers, crushed pineapple, coconut, and a creamy filling – topped with maraschino cherries – this is an easy dessert in a pinch!

Like a lot of desserts that make their way down the grapevine, I think this Italian No Bake Cake received its name just from evolving as a no-bake version of Italian Cream Cake. With the vanilla wafers, crushed pineapple, sweetened condensed milk, Cool Whip, coconut, and cherries – I really am not sure what makes this dessert “Italian” in nature!

Honestly though, one bite of this delicious cake, and I could care less what it’s called. It’s THAT good!

If you’re planning on making this cake, there’s a couple of things to keep in mind. Even though it’s no bake, meaning no part of the preparation process involves cooking in any way, you definitely want to give it a few hours in the refrigerator. The longer that you keep in the fridge, the better! This will give the vanilla wafers time to soak up the cream filling and soften them to form a sponge-like crust at the bottom of the cake – the best part!
 
The second thing to keep in mind with this cake is to be prepared to give out the recipe if you take it to a gathering! My friend was even asking me what the ingredients were because she was so curious.

Instructions
  1. Mix in a bowl the lemon juice and condensed milk, then add the pineapples and mix all together.
  2. Pour this over the vanilla wafers in the dish.
  3. Add another layer of the Vanilla Wafers on top of the pineapple mix.
  4. Then top with cool whip, and coconut and cherries.
  5. Refrigerate overnight
  6. Serve and Enjoy!
  7. Note: You can replace coconut with pecans if you’d like.

Ingredients

  • 1 box Vanilla Wafers
  • 1 20 oz can crushed pineapple with juice
  • 1/4 cup lemon juice
  • 1 can sweetened condensed milk
  • 1 package coconut
  • 1 8 oz container cool whip
  • 1 small jar cherries
  • 1 cup pecans, optional

Instructions

  1. Layer the bottom of a 9x13 (3- quart) baking dish with Vanilla Wafers.
  2. Mix in a bowl the lemon juice and condensed milk, then add the pineapples and mix all together. Pour this over the vanilla wafers in the dish.
  3. Add another layer of the Vanilla Wafers on top of the pineapple mix.
  4. Then top with cool whip, and coconut and cherries.
  5. Refrigerate overnight.
  6. Serve and Enjoy!

So, it seems like it should have a pudding layer--does i thicken up some in the fridge? Or do the vanilla wafers balance out the liquid from the pineapple, lemon juice and Eagle Brand?
