Ingredients Needed

For The Homemade Graham Cracker Crust
Graham Cracker Crumbs – either crush with a rolling pin or use a food processor or blender.
Sugar – use white granulated
Butter – melted. I use unsalted.

For The Pink Lemonade Ice Cream Pie Filling
Strawberry Ice Cream – thawed, Use your favorite store-bought brand.
Pink Lemonade Concentrate – thawed, so that it mixed easily with the other filling ingredients.
Cool Whip – thawed. Use your favorite store-bought brand.

Ingredients For The Homemade Whipped Cream Topping
Heavy Whipping Cream – forms the base of the whipped cream
Powdered Sugar – sweetener
Vanilla Extract – for flavor
Lemon Zest – to flavor the whipped cream
Large Piping Bag With Star Tip – pipe on the topping around the edges of the frozen pie before serving
Garnishes – lemon zest and lemon wedges, to place decoratively along the edges of the pie.

How To Make Pink Lemonade Ice Cream Pie

STEP 1: Prepare The Crust. Make the homemade crust by mixing crushed graham crackers with sugar and melted butter. Press the mixture in a sprayed pie pan and bake for 10 minutes. Set it aside and let it cool completely. Alternatively, you can use a store-bought premade graham cracker crust.
STEP 2: Make The Ice Cream Filling. Mix the softened strawberry ice cream, thawed pink lemonade, and thawed whipped topping in a large mixing bowl.
STEP 3: Assemble And Freeze. Pour the pink lemonade ice cream mixture into the cooled pie crust and smooth out the top. Cover and place in the freezer overnight to fully set.
STEP 4: Decorate The Top. Make the homemade sweetened whipped topping and pipe it around the edges of the frozen pie before serving. Garnish with lemon zest and lemon slices.

Can I Use A Premade Store Bought Crust?

Absolutely! This is my favorite hack for making the Pink Lemonade Ice Cream Pie a no-bake effort. Just use your favorite brand of a store-bought graham cracker crust and you’re ready to assemble without turning on the oven!

No Bake Oreo Crust Idea

If you’re looking for a slightly different flavor for a no-bake crust, you can easily make a golden Oreo cookie crust in just minutes. Use 20-24 crushed golden Oreo sandwich cookies with the filling left in. Combine them with about 4 tablespoons of melted butter and stir well. Press the cookie crumb mixture into your pie plate and continue with the recipe.

Can I Use Store Bought Whipped Cream For The Decorative Topping?

Absolutely! If you want to save even more effort, just skip the homemade lemon-infused whipped cream topping and either spread a softened tub of whipped cream on top of the pie before freezing or use a can of whipped topping to create dollops of whipped cream around the edges. If doing the latter, you can just squirt the dollops of whipped cream on right before serving rather than before freezing. However, do garnish the top, either way, with lemon zest and/or lemon slices right before serving for a pretty presentation!

Ice Cream Variation

I love using store-bought strawberry ice cream because it’s already pink, plus it has the added deliciousness of summer’s favorite fruit – strawberries! However, you can substitute plain vanilla ice cream (not vanilla bean) if need be. If you want it to be a pink shade, add a scant drop of red or pink food coloring as you mix the ice cream filling ingredients.

Flavor Variations

While this recipe calls for a pink lemonade flavor, you can easily change up the flavor by using a different fruit concentrate, any of which would be perfect for summer.

Note: you’ll want to use plain vanilla ice cream as the base for any of these changes

To a plain vanilla ice cream base, swap out the pink lemonade concentrate for one of the following:

  • Lemonade Concentrate – garnish with lemon zest and lemon slices before serving
  • Raspberry Lemonade Concentrate – garnish with lemon zest and fresh raspberries before serving
  • Orange Juice Concentrate – garnish with orange zest before serving
  • Limeade Juice Concentrate – garnish with lime zest and lime slices before serving

Storage

Keep this ice cream pie in the freezer, tightly covered, until ready to serve. Any leftovers should be tightly covered and put back in the freezer.

  • 1 1⁄2 cups graham cracker crumbs
  • 1⁄4 cup sugar
  • 6 Tablespoons unsalted sweet cream butter, melted
  • 9 inch pie pan
  • Pam Baking spray
  • Pink Lemonade Ice Cream Pie Ingredients:
  • 1 Quart strawberry ice cream
  • 1 - 8 ounces pink lemonade concentrate, thawed
  • 1 - 8 ounces Cool Whip, thawed
  • Whipped Cream topping:
  • 1 1⁄2 cups heavy whipping cream
  • 3⁄4 cup powdered sugar
  • 2 teaspoon pure vanilla extract
  • 2 Tablespoons lemon zest
  • Large piping bag with star tip
  • Garnish
  • Lemon zest
  • Lemon wedges

Instructions

  2. Preheat oven to 350 degrees.
  3. Graham Cracker Crust: Combine the ingredients in a medium bowl. Spray the pie pan with the baking spray. Press half the graham cracker crust into the pie dish.   4. Pink Lemonade Ice Cream Pie: Remove the strawberry ice cream from the freezer and allow it to thaw for 20 minutes to soften the ice cream. In a large bowl, combine the pink lemonade, ice cream, and Cool Whip. Whisk everything until combined and no ice cream lumps appear. Once the mixture is smooth, pour it into the pie shell and spread it evenly. Place into the freezer overnight. Pink Lemonade Ice Cream Pie
  5. Whipped cream topping: Using a large bowl, place the bowl into the freezer for 10 minutes. Remove the bowl after 10 minutes and add in the 1 1⁄2 cups heavy whipping cream, powdered sugar, vanilla, and lemon zest. Using a hand mixer, beat the ingredients together until stiff peaks form for about 10 minutes. Scoop half of the whipped cream into the piping bag.
