Ingredients

Flour – Use unbleached all-purpose flour, which forms the base of the waffle batter.
Baking Powder – allows the waffles to rise as they cook.
Salt- a seasoning that enhances all flavors.
Ground Cinnamon – a warm spice to add flavor to the waffles.
Sugar – to add a little more sweetness to the batter.
Egg – divide the yolk from the whites. The egg helps bind the ingredients together, and the whipped egg whites add lightness and air to the batter.
Overripe Bananas – mashed. Adds a natural sweetness and flavor to the waffles.
Milk – use any type of milk, including plant-based, such as almond or coconut milk.

Instructions

  1. Preheat waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.
  3. In a medium bowl, beat the egg whites to stiff peaks.
  4. In another medium bowl, beat together the bananas, egg yolk, and milk. Add to the flour mixture and beat just until blended. Fold in the egg whites.
  5. Grease the waffle iron according to the manufacturer’s instructions. Scoop the batter into the waffle iron (approximately ¾ cup, depending on your waffle iron). Cook until the waffle iron stops steaming or the waffle reaches your desired color.
  6. Serve with assorted nuts, chocolate chips, syrup, honey, and/or sliced bananas.

How Ripe Should The Bananas Be?

Look for a few brown spots on your bananas, which means they’re ripe and sweet. If it’s all brown, that will make your batter even sweeter. Super-ripe bananas are very soft, making them easier to mash and incorporate into the batter without lumps.

Can I Use Frozen Bananas?

Fresh or frozen bananas will work. Make sure to thaw the frozen bananas before mashing and adding them to the bowl.

Are Banana Waffles Freezer-Friendly?

Yes. Make sure to let the waffles cool down completely to room temperature, then wrap each one separately in plastic wrap and aluminum foil. Place them in freezer-safe bags or a sealable container for up to four months.

Storage

How To Reheat Leftover Banana Waffles

To reheat from frozen or refrigerated leftovers, preheat your oven to 350 degrees F. Bake for 10-15 minutes, or until the waffle reaches the desired internal temperature. You can also heat them in a toaster. I do not recommend using the microwave, as it can make the waffles too soft and possibly soggy.
