Ingredients

Butter – for cooking the chicken.
Olive Oil – for cooking the chicken.
Chicken Breasts – can also use chicken thighs.
Seasoning– salt, pepper, and garlic salt for the chicken.
Onion – diced, to add flavor and texture.
Garlic– minced, to add flavor and texture.
Sun-Dried Tomatoes – drained well and chopped. Adds a sweet yet tangy flavor to the soup.
Chicken Broth – creates the base of the soup. Adds savory depth and helps to balance the cream.
Tomato Paste – to add depth of flavor to the soup.
Short Pasta – use penne, rotini, or bowtie.
Heavy Cream – adds richness and enhances the soup’s creaminess.
Parmesan Cheese – when melted, it adds a savory and nutty flavor to the soup.
Garnishes – optional, but fresh basil, parsley, or spinach add a little color and flavor to each bowl of soup.

Instructions

  1. Cook the Chicken. Season both sides of the chicken breasts generously with salt, pepper, and garlic salt. In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the chicken and cook until golden on both sides and cooked through. Remove from the pot and set aside to rest, then shred or chop.
  2. Sauté the Aromatics. In the same pot, add the onion and cook for about 3 minutes until softened. Stir in the garlic and sun-dried tomatoes and cook for another minute.
  3. Build the Broth. Add the chicken broth and tomato paste. Stir until the tomato paste dissolves. Bring the soup to a gentle boil.
  4. Add the Pasta. Stir in the pasta and cook according to package directions until tender. Add more broth if needed as the pasta cooks.
  5. Make It Creamy. Stir in the heavy cream and Parmesan cheese. Add the shredded chicken back into the pot.
  6. Finish & Serve. Simmer for a few minutes until creamy and heated through. Taste and adjust seasoning. Garnish with fresh basil, parsley, or spinach if desired.

  • Chicken: Instead of cooking raw chicken, save time and effort by using shredded rotisserie chicken.
  • Pasta – Use any short pasta, such as penne, rotini, or bowtie. You can substitute the dried pasta with refrigerated potato gnocchi or cheese tortellini.
  • Low Carb – Omit the pasta and use frozen or fresh cauliflower florets.
  • Cream – Replace heavy cream with half-and-half or evaporated milk, though you’ll lose the richness of flavor and texture.
  • Add-Ins – For a heartier soup, add in sliced mushrooms, zucchini, or carrots.

How To Store And Reheat Leftovers

  • Refrigerator: Let the leftover soup cool before storing it in an airtight container. It will keep in the fridge for up to 3 days. Reheat leftovers in a pot on the stovetop over medium-low heat until your desired temperature is reached.
  • Freezer: Because the pasta is cooked in the soup, I don’t recommend freezing the leftovers. The pasta in the soup may not remain intact and will become mushy once reheated.
