Ingredients Needed

Smoked Sausage – sliced. Use your favorite, or use spicy smoked sausage like Andouille.
Diced onion. This will be sauteed along with the sliced sausage before adding other ingredients. Use white, yellow, or red onion.
Chicken Broth – liquid needed to help cook the pasta and flavor the dish.
Canned Tomatoes With Green Chiles – to help add flavor and texture to the dish.
Heavy Cream– helps thicken the dish and make it creamy. I would not use half and half—it’s not thick enough.
Campanelle Pasta—This fun and wavy pasta works well in this recipe. It holds onto the creamy sauce and cheese.
Pepper Jack Cheese – shredded. This variety of cheese melts well and adds great flavor.
Scallions – sliced, for a garnish before serving.

What Is Campanelle Pasta?

Campanelle means “little bells,” represented by the shape of this pasta. The bell shape has ruffled edges. This design makes it great for dishes where you want sauce and/or cheese to coat the pasta. If you can’t find campanelle, use fusilli, which is a twisty pasta that will also hold sauce and cheese.

Variations

  • Sausage: You can swap out the smoked sausage for practically any type and flavor. Go mild and sweet or hot and spicy – it’s up to you!
  • Pasta: If you can’t find campanelle, use fusilli. It is a twisty pasta that will also hold creamy sauces and cheese. Ziti, penne, and elbow macaroni are also pasta shapes that will work well with this recipe.
  • Broth: You can swap out the chicken broth for vegetable broth.
  • Tomatoes: Instead of the tomatoes with green chiles, you can use plain diced tomatoes or even tomato sauce.
  • Cheese: I love the Pepper Jack because of the flavor. It melts well. You can also use shredded cheddar or try a combination of both!

Can I Add Vegetables To This Recipe?

Sure! If you want to sneak in vegetables, broccoli florets (frozen works well to keep the prep time down!) or diced green bell peppers and sliced mushrooms are great additions.

Storage

Leftovers should be cooled, placed in an airtight container, and refrigerated. They will keep for up to four days. To reheat, microwave individual portions quickly until the desired temperature is reached. You need to add a splash of water to help moisten them. Place the larger amounts of leftovers in a skillet on the stovetop with a splash of water. Reheat on medium-low and stir until they reach the desired temperature.
