Ingredients Needed

  • Cream Cheese – you’ll mix this with the cookie crumbs to form the batter for the gingerbread truffles.
  • Gingersnap Or Gingerbread Cookies – make sure they’re crisp cookies, not soft since you’ll need to process them into dry crumbs. The crumbs will be mixed with the cream cheese to form the truffles.
  • White Almond Bark – this forms the white candy coating that you’ll dip each gingerbread truffle in.
  • Orange Gum Drops – this candy will be cut into small triangles to form a nose for each snowman.
  • Twizzler Pull And Peels – this candy will be used to decorate each snowman with a scarf
  • Mini Oreos – these mini cookies will become the brims of the hats for each snowman.
  • Mini Reeses Cups – the candies will become the top portion of the snowman hats.
  • Black Frosting – use the gel frosting so you can dot the eyes of each snowman.

How To Make Gingerbread Snowman Truffles

Step 1: Crush the gingersnap cookies. Use a food processor or put them in a Ziploc bag and use a rolling pin to crush them.

Step 2: Combine the cookie crumbs with softened cream cheese. Use an electric mixture to combine.

Step 3: Form the truffle balls.  Use a cookie scoop and roll them into balls. Set them on a parchment paper-lined tray.

Step 4: Freeze the gingerbread truffles. Place the tray in the freezer to chill the cookie balls before dipping them in the white candy coating.

Step 5: Melt the almond bark. Use the microwave to melt the bark in 30-second intervals until smooth and melted.

Step 6: Dip the gingerbread truffles. Using a spoon, add a “snow puddle” for each truffle on the parchment paper and then dip each truffle in the melted candy coating. Place the dipped truffle on one of the “puddles.” Repeat for all of the truffles.

Step 7: Let the candy-coated truffles set before decorating.

Step 8: Decorate the snowmen. (see specifics down below)

How To Dip The Gingerbread Truffles In Chocolate

I use the spoon, fork, and toothpick methods to dip truffle balls in chocolate candy coating.

  1. Once the chocolate is melted and still warm, pick up each truffle with your fingers and drop it into the chocolate.
  2. Use a spoon to spoon the melted candy coating over the truffle to make sure it’s completely covered.
  3. Use a fork to scoop underneath the white chocolate-coated truffle and lift it out of the coating. Hold the truffle over the bowl to let any excess drip back into the bowl. You can gently tap the fork on the side of the bowl and then gently scrape the bottom of the fork on the side of the bowl to remove any remaining chocolate.
  4. Use a toothpick to help push the white chocolate-covered truffle back onto the parchment paper, and in this case, onto one of the “puddles,” so that it doesn’t roll off the fork and mess up the smooth candy coating.

How To Decorate The Snowmen

Once the chocolate candy coating has set and hardened, you can decorate the snowmen.

Scarf: Give each snowman a scarf by using one of the peels from the Twizzlers. Wrap it around the base of the truffle where it meets the “puddle.” You can also use rainbow sour strips or fruit roll-ups for their scarves instead of Twizzlers.

For The Nose: Using scissors, cut the orange gumdrops into tiny triangles to use for the carrot nose. You could also dot on the noses using orange gel food coloring.

Eyes: Use black gel food coloring to dot the eyes.

Hat: Use the same black gel food coloring to help secure half of a mini Oreo to each of the snowmen’s heads. Then, add a mini Reese’s cup to the top of the cookie half to make the full hat.

Can I Use A Different Cookie Or Flavor?

Sure! I used gingersnaps. Any type of gingerbread cookies or even molasses cookies that are more on the crispy side will work.

Other great ideas are Nutter Butters, ‘Nilla Wafers, Danish Butter Cookies, Oreos, and Sugar Cookies,

Note: you want to use firm cookies rather than soft cookies since they need to be processed or crushed into fine crumbs. Soft and doughy cookies just won’t work, so look for crisp cookies.

Can I Use White Chocolate Chips Instead Of Almond Bark?

Yes,  You can also use white melting wafers. With the white chocolate chips, I like to add a little coconut oil to the melted chocolate to give it a smoother finish.

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1 package (12 ounces) gingersnaps, gingerbread cookies
  • 1 pound white almond bark
  • Orange gum drops
  • Twizzler pull and peels
  • Mini Reeses Cups
  • Mini Oreos
  • Black frosting

Instructions

  3. In a large bowl add your cookie crumbs and cream cheese.Gingerbread Snowman Truffles

  5. I use a 1 ½ tablespoon cookie scoop to make rounded scoops roll them into balls and set them on a tray lined with parchment paper. 
  6. Place the tray with the truffles into the freezer or fridge to chill, this will make dipping much easier. 
  7. When ready to dip melt the white almond bark in 30-second intervals in the microwave until smooth and melted.Gingerbread Snowman Truffles

  9. Dip each ball into the white chocolate and using 2 forks shake off any excess chocolate and place it onto one of the “puddles”.Gingerbread Snowman Truffles
  10. Repeat with the other truffles.
  11. Once the almond bark has set on the truffles you can decorate.

Notes

I love these cute little Gingerbread Snowman Truffles!  I use gingersnaps or gingerbread cookies mixed with cream cheese.  They get dipped in white chocolate before getting cute little Reeses Peanut butter cup hats, gum drop noses, and licorice scarves! These are fabulous for the holidays and kids will love them and can help make them as they are no bake!

I love making these truffles with ginger spiced cookies because you get a gingerbread-flavored truffle that tastes like it was frosted with cream cheese frosting and a sweet pop from the white chocolate coating.

Tips and Tricks

  • Store these in an airtight container in the fridge for up to 1 week.
  • You can crush the cookies by hand using a rolling pin but make sure there are no large cookie pieces left. 
  • You can make these smaller if you like and get more out of the yield but the smaller they are the harder they may be to decorate.
  • You can use gingersnaps, gingerbread cookies, or even molasses cookies.
  • The ginger cookies I got had cinnamon in them but if you find your cookies don’t have enough cinnamon flavor you can add a pinch to your dough. 
  • You can paint on the eyes using a tiny paintbrush with the frosting or you can paint it with black food coloring.  They also sell food coloring pens which would make drawing the eyes on super easy.
  • You can also use orange food coloring for the noses if you wish.
  • You can use rainbow sour strips or fruit roll-ups for their scarves as well.
