These Carrot Patch Brownie Parfaits are an adorable and tasty treat for Easter or springtime parties. This recipe is part craft. It is easy for the kids to help make them, and they can assemble these cute edibles!

Fresh strawberries are dunked in orange candy coating before being nestled on a delicious layered chocolate parfait. Melted chocolate is used to mold the parfait cup, which is then filled with crumbled brownies and pudding. Crushed Oreo’s create a bed of dirt on top, and finally, the “carrot” is placed on top!

Ingredients

For The “Carrots”
Orange Candy Melts – to cover the fresh strawberries
Coconut Oil – to mix with the melted candy melts to help keep the texture smooth
Fresh Strawberries – You’ll need 12 large strawberries, rinsed and dried well, with the green tops left on

For The Brownie Parfaits
Pre-made Chocolate Fudge Brownies—cut into tiny chunks. You can use premade store-bought brownies or make them yourself ahead of time.

For The Chocolate Pudding
Instant Fudge Brownie Pudding Mix – use your favorite brand
Whole Milk – to mix with the pudding mix

For The Chocolate Ganache
Semi-Sweet Chocolate Chips – Melted chips will help form the chocolate ganache.
Heavy Whipping Cream – mix with the melted chips to form the ganache.

For The Carrot Patch “Dirt”
Crushed Oreo’s – These become the “dirt” for the parfait cups.

For The Chocolate Sphere Bowls
Milk Chocolate Melting Wafers – Melt them to form the molds.

How To Make And Assemble The Parts Of The Carrot Patch Brownie Parfaits

Make The Candy-Coated Strawberry Carrots
Melt the candy melts in the microwave.
Use a spoon to drizzle some of the remaining melted candy. Move it back and forth across the strawberries, creating horizontal lines.
Set aside and allow to dry for one hour.

Make Chocolate Sphere Bowls
Melt the milk chocolate wafers in a large bowl. Use the microwave for 45 seconds in increments.

Spoon some melted chocolate into six molds and coat the entire mold. Pour any extra chocolate back into the bowl.

Place the coated molds into the fridge for 5-10 minutes.
Remove the silicone mold from the fridge and gently peel away from the hardened shell. Carefully place the shell onto the cookie sheet. Make 12 shells. Place them all on a cookie sheet and set aside.

Prepare The Brownie Base
Make sure your pre-made brownies are cut into bite-sized pieces.

Make The Chocolate Pudding
Follow the directions on the back of the pudding mix to make the pudding.

Prepare The Carrot Patch Dirt
Finely crush the Oreo cookies in a food processor. Alternatively, use a rolling pin to crush them in a Ziploc bag.

Make The Chocolate Ganache
Bring the heavy cream to a simmer using a small pot.
Pour the chocolate chips into a small bowl.
Pour the simmered heavy cream over the chocolate chips. Allow it to sit for 1 minute.

Build The Parfait
Add about 3 tbsp of pudding into each chocolate sphere.
Add a layer of bite-sized brownies to the pudding.
Spoon chocolate ganache over the brownies.
Sprinkle the crushed Oreo “dirt” on top.

Variations

Melting Wafers
This delicious parfait is perfect for springtime. To celebrate Valentine’s Day, coat the strawberries with white or pink. For St. Patrick’s Day, try green.

Garnishes
I just drizzled an extra melted orange wafer over the already-dunked strawberries in this recipe.

Molds
Depending on your theme, you can easily swap out the silicone sphere mold for any shape. Try a heart for Valentine’s Day, a shamrock for St. Patrick’s Day, an Easter egg shape, or a summer flower shape.

Ingredients

  • Candy-coated strawberry carrots:
  • 1 ½ cup Orange candy melts
  • 2 tsp coconut oil
  • 12 large strawberries rinsed and dried well
  • Brownie Parfaits:
  • 1 package chocolate fudge brownies already-made, cut into tiny chunks
  • 1 package instant fudge brownie pudding mix
  • 2 cup whole milk
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • 1 cup crushed Oreos
  • Chocolate sphere bowls:
  • 1 – 16 oz package Ghirardelli milk chocolate melting wafers

Instructions

  1. Candy-coated strawberry carrots:
  2. Line a large baking sheet with parchment paper or a silicone baking mat.
  3. Place the candy melts in a small, deep, microwave-safe bowl and microwave in 30-second intervals, stirring until smooth, about 2 minutes.
  4. Stir in the coconut oil until smooth.
  5. Dip the strawberries in the melted candy and swirl until fully coated. Then, place the freshly coated strawberries on the baking sheet.
  6. When all the strawberries are coated, drizzle some of the remaining melted candy back and forth across the strawberries with a spoon to make horizontal lines. Set aside and allow to dry for one hour.
  7. Chocolate sphere bowl directions:
  8. Melt the Ghirardelli milk chocolate wafers in a large bowl in increments of 45 seconds. Using a spoon, spoon some of the melted chocolate into six molds and coat the entire mold.
  9. Dump the extra chocolate back into the bowl. Place the coated molds in the fridge for 5-10 minutes. Remove from the fridge and gently peel the silicone mold away from the hardened shell. Carefully place the mold onto the cookie sheet. Repeat the steps so you have another set of shells. Once the shells are made, place them onto a cookie sheet.
  10. Chocolate ganache:
  11. Using a small pot, bring the heavy cream to a simmer. Pour the chocolate chips into a small bowl and allow them to sit for 1 minute. Whisk until smooth and set aside to cool until cool to the touch. Stir it occasionally so it doesn’t harden.
  12. Building the parfait:
  13. Follow the directions on the back of the pudding mix to make the pudding. Once the pudding is made, spoon about 3 tbsp of pudding into the chocolate spheres.
  14. Add a layer of bite-sized brownies on top of the pudding—spoon chocolate ganache over the brownies. Sprinkle crushed Oreos on top. Place a carrot strawberry in the center. Enjoy!
