You’ll love how easy it is to make this fun and delicious Carrot Cake Chick Truffles bite-sized treat! A boxed carrot cake mix gets you started. First, bake the cake, cool it, then crumble the cake, and mix with cream cheese before forming into truffle balls. Dip the balls in yellow melted candy coating and decorate them with sprinkles to resemble the eyes, beak, wings, and feet. Ingredients Needed

Boxed Carrot Cake Mix – plus the ingredients needed on the back of the cake mix. Usually, eggs, water, and oil. Make and bake according to the box directions.
Cream Cheese – softened. You’ll mix the softened cream cheese with the cool and crumbled carrot cake to make the truffle balls.
Yellow Candy Melts – for coating the truffle balls.
Sprinkle For Decorating – you’ll need mini chocolate chips for the eyes and yellow and orange sprinkles for the beak, feet, and wings.

How To Make The Carrot Cake Chick Truffles

STEP 1: Bake and cool the carrot cake according to the box directions. I like to bake mine in a 9×13 baking dish.
STEP 2: Cube up the cake and place it into a large mixing bowl along with the softened cream cheese. Using an electric mixer, combine the cake and cream cheese until well mixed.
STEP 3: Roll the cake mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill them for 2 hours or pop them in the freezer for an hour.
STEP 4: Once the truffles are well-chilled and solid, melt the yellow candy melts in a microwave-safe bowl in 30-second intervals until melted and smooth.
STEP 5: Using 2 forks, dip the truffles in the melted candy coating and tap off any excess before placing them back on the parchment paper-lined tray.
STEP 6: Working quickly, and one at a time, decorate each chick truffle after dipping. I used 2 mini chocolate chips for their eyes, a small round yellow sprinkle for the beak, and yellow and orange leaf sprinkles for their feet and wings. Once set, serve.

How To Save Time And Effort With This Recipe

My favorite tip for making these Carrot Cake Chick Truffles is to use a prepared carrot cake. You can do this by purchasing a store-bought carrot cake loaf (one that hasn’t been frosted) or by making the carrot cake ahead of time and allowing it to cool. You can make it the day before or make it and freeze it until ready to make the truffles.

How To Dip The Truffles In Candy Coating

  • Prep: Melt the yellow wafers in the microwave in a medium-sized bowl. Have a sheet of parchment paper ready to set the dipped truffles on.
  • Dip: Using two forks, dip each carrot cake truffle ball, one at a time, into the melted coating. Make sure the entire truffle is coated. Lift it with the forks, letting any coating drip back into the bowl. Place the coated ball on the parchment paper. Before moving to the next truffle, go ahead and decorate the one you just coated before it hardens.

How To Decorate The Carrot Cake Chick Truffles

  • For The Eyes: Use 2 mini chocolate chips. Variation: use small candy googly eyes, black gel icing, or any small round black sprinkle. 
  • For The Beak: Use a small yellow or orange sprinkle. Variation: use orange gumdrops, starbursts, or airheads.
  • For The Feet And Wings: Use yellow and orange leaf sprinkles. Variation: Use flower sprinkles.

I love this basic recipe for making carrot cake truffle balls because not only can you make them into adorable yellow baby chicks, swap out the color of the melting wafers, and decorate them differently, depending on the occasion. You can also swap out the carrot cake flavor for a vanilla cake mix if you’re not a fan of carrot cake. Here are some ideas for other spring-season truffle decor.

  • Carrot Cake Cake Mix or Store bought Carrot Cake or Homemade Carrot Cake
  • Box of carrot cake mix baked according to box directions
  • 8 ounces cream cheese, softened
  • 1 pound yellow candy melts
  • Sprinkles for decorating

Instructions
