These Peppermint Stuffed Snowman Cookies are actually easy to make. This recipe makes just 6 cookies, so if you need more, you can easily double it. These little melting snowmen look so sweet on a cookie tray, so they’re great for parties – you’ll definitely want more than 6 cookies!.

Oh, and let the kids help decorate them! They’ll have tons of fun adding the face, scarf and making the little earmuffs for the snowmen heads. They may even come up with some other great ideas for edible decorations – you never know! It’s a great craft for rainy or snowy winter days when you’re stuck inside.

Ingredients Needed:

For The Cookies

Butter – I use unsalted.

Sugars – You’ll need both white and brown.

Egg – To help hold the batter together.

Vanilla Extract – For flavor.

Flour – Use regular all purpose.

Unsweetened Cocoa Powder – For the chocolate flavor.

Baking Soda – To help the cookies rise.

Salt – Seasoning.

Peppermint Patties – To stuff inside the cookie dough before baking.

For The Snowmen

Marshmallows – For the snowman heads.

White Almond Bark – To coat the marshmallows and make the melting puddle.

Gumdrops – You’ll need orange, red and green for the nose and earmuffs.

Twizzler Pull aAnd Peels – For the scarf.

Black Frosting – For the eyes and earmuffs.

How To Make Peppermint Stuffed Snowman Cookies

Note: This is a summary of the recipe steps. For complete instructions, see the recipe card down below.

  • Make The Dough: Cream together butter and sugars. Mix in egg and vanilla. Add the dry ingredients and mix until the dough forms. Chill the dough for 30 minutes.
  • Form The Cookies: Separate the dough into 6 balls and place a peppermint patty in the middle of each ball. Form the dough around the patty to cover and roll back into a ball.
  • Bake: Place all the stuffed peppermint patty cookie balls on a baking sheet and bake at 350 degrees F for 10-12 minutes. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring to a cooling rack. Let them cool completely before decorating.
  • Add The Snowmen: Melt the white almond bark in the microwave, Dip just the bottom of each marshmallow into the almond bark and place one on each cookie. Spoon the almond bark over each marshmallow to cover it and around the bottom to create a puddle shape.
  • Decorate: Use Twizzler peels to wrap around the base of the marshmallows for the scarves. Use orange gumdrops cut into tiny triangles for the noses. Dot on black frosting for the eyes. Using the black frosting, wraw a line across the top of the marshmallows to the earmuff headband. Use the red and green gumdrops, cut flat, for the earmuffs on each side of the marshmallows.

Cookie Variations

  • Don’t like peppermint? Leave out the patties and just make chocolate cookies. Or swap out the peppermint for a dollop of peanut butter in the center of each cookie instead.
  • Make a different cookie. How about a gingerbread base? Just leave off the frosting and follow the instructions in this recipe for adding the snowmen on top.
  • Try my Cake Mix Cookies. Bake and then follow the instructions in this recipe for adding the snowmen on top.
  • Use a store-bought cookie. This is the ultimate shortcut when you want to be crafty but don’t have time to bake. Be sure and use a substantial and large enough cookie to hold the snowmen.

How To Decorate the Baked Cookies

Melt The Almond Bark: Melt the white almond bark in 30 second intervals in the microwave until smooth and melted.

Add The Snowmen: Use fresh fluffy marshmallows and dip only the bottom of each one in the almond bark before setting on the cookies. This will help the marshmallows adhere to the cookies. Spoon the almond bark over each marshmallow to cover it and around the bottom to create a puddle shape.

Add The Scarves: Use one peel from the Twizzlers and wrap around each marshmallow, at its base, to create a scarf.

Create The Eyes: Use black decorating gel frosting that comes in a tube to dot on the eyes.

Attach The Nose: Cut the orange gumdrops into tiny triangles and attach for the nose.

Earmuffs: Use the black decorating gel frosting to draw a line on top of each marshmallow to create the earmuff headband. Cut the red and green gumdrops so they have a flat surface to attached to each side of the marshmallows, connecting with the headband, for the earmuffs.

  • Swap out the gumdrop earmuffs for M & Ms. You may need to dot them with more melted almond bark or gel frosting to help them stick to the sides.
  • Instead of using a Twizzler peel, draw on the scarf using a different color of gel frosting.
  • Dot on the nose using gel frosting.
  • Use mini chocolate chips for the eyes.
  • Instead of earmuffs, add a hat to the snowmen. Use a mini-Reese’s cup. Attach it upside down, using more melted almond bark or the gel frosting to help it adhere, if needed.

Ingredients

  • ½ cup butter
  • ¾ cup brown sugar
  • 2 tablespoon white sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 & ¼ cup flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 6 peppermint patties
  • 6 marshmallows
  • 1-pound white almond bark
  • Orange gum drops
  • Twizzler pull and peels
  • Red and green gum drops
  • Black frosting

Instructions

  2. Preheat your oven to 350 degrees.
  3. Line a baking sheet with parchment paper then set aside.
  4. In a large bowl beat the butter, brown sugar, and white sugar together until light and fluffy. Peppermint Stuffed Snowman Cookies

  7. Chill for 30 minutes.

  11. Let the cookies cool on the baking sheet for 10 minutes then transfer to a cooling rack.

  13. When ready to dip melt the white almond bark in 30 second intervals in the microwave until smooth and melted.

  15. Spoon the almond bark over each marshmallow to cover it and around the bottom to create a puddle shape. 
  16. Repeat with each cookie.
  17. Once the almond bark has set on the cookies you can decorate.

  20. Using the black frosting dot on 2 eyes. Peppermint Stuffed Snowman Cookies

  22. Cut the flat bottom off of 6 red gum drops and 6 green gum drops.
  23. Place the flat part of the gum drop on one side of the snowman's head and one on the other to create earmuffs. Peppermint Stuffed Snowman Cookies

Notes

Tips and Tricks

  • Store these in an airtight container for up to 5 days.
  • While I love stuffing these with peppermint patties for the holidays you can swap out the peppermint patties for a peanut butter cup.
  • You can paint on the eyes using a tiny paintbrush and the frosting or you can paint with black food coloring.  They also sell food coloring pens which would make drawing the eyes on super easy.
  • You can also use orange food coloring for the noses if you wish.
  • You can use rainbow sour strips or fruit roll ups for their scarves as well.
