Light, fluffy and scrumptious, these Christmas Cake Mix Cookies are an easy way to bake up a batch of holiday sweetness that’s studded with red and green M&Ms and sprinkles for a festive touch.

We all love a good shortcut when baking, and here, I’ve got the easiest way to make a batch (or two) of Christmas cookies, thanks to a boxed cake mix. There’s no chilling of the dough, no rolling, and no cutting. Just mix, scoop, bake and enjoy!

This recipe will make approximately 48 cookies, but you can certainly cut the recipe in half and just use one box of cake mix if need be. The reason I used two boxes is that I made a vanilla batch and a chocolate batch. If you can’t decide between the two flavors, go ahead and make both batches. I’m sure your friends and neighbors would be delighted to receive a festive plate of these cookies!

Ingredients Needed

  • Box Of White Cake Mix – use your favorite brand
  • Box Of Chocolate Cake Mix – use your favorite brand
  • Eggs – you’ll need 4 eggs which will be divided between the 2 cake mixes
  • Vegetable Oil – will also be divided between the 2 cake mixes
  • Christmas Sprinkles – in red and green
  • Christmas M&Ms – in red and green

How To Make Christmas Cake Mix Cookies

  1. Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper. Set aside.
  2. In a large mixing bowl, use a mixer to mix together the white cake mix, 2 eggs, and 1/2 cup vegetable oil until combined and the dough has formed.
  3. Fold in half of the sprinkles and half of the M&Ms.
  4. Using a medium cookie scoop, scoop cookies onto the parchment paper, about two inches apart.
  5. Bake in your preheated oven for 9-11 minutes.
  6. Allow the cookies to cool slightly, then move them to a wire rack to cool completely.
  7. Repeat this process for the chocolate cookies, mixing the cake mix, eggs, and oil, and folding in the remaining sprinkles and M&Ms. Bake and cool. Enjoy!

Variations

Cake Mix – Here, I’ve used vanilla and chocolate, since those have universal appeal. Branch out and try other flavors, and adjust the inclusions so they fit the flavor. For example, carrot cake cookies would be awesome with chopped nuts and/or shredded coconut mixed in the batter.

Chocolate Chips – Chocolate chips are always a delicious inclusion in almost any cake mix cookie. Dark, milk chocolate, white, or even cinnamon chips are perfect for cake mix cookies.

Nuts – From walnuts to pecans and pistachios to almonds, nuts are always a crunchy option to add.

Dried fruits – Dried cranberries, dates, and pineapple would all be great additions to cake mix cookies.

Sprinkles – Sprinkles are one of the best ways to anchor a theme for holidays or parties. Just choose your colors and/or designs and add directly to the batter or sprinkle on the top before baking.

Candy – Here, I used M&Ms, but chopped candy bars, Reese’s cups, or crushed hard candies like peppermint are all wonderful ideas to consider to change the flavors of cake mix cookies.

Frosting – Don’t forget about pre-made frosting that’s right next to those boxed cake mixes in the grocery store! Grab a container or two and frost your baked and cooled cookies. For a little something extra, add a few sprinkles on top of the frosting.

Which Brand Of Cake Mix Should I Use?

Use your favorite! But be sure and use the ingredients specifications for egg and oil that I listed here. Remember, we’re making cookies, not cake.

Storage

Store cookies at room temperature in an airtight container. They will keep for up to a week.

To freeze the baked and cooled cookies, store them in a freezer-friendly container or Ziploc bag for up to 3 months.
