How To Make Slow Cooker Hawaiian BBQ Chicken

STEP 1: Combine the eggs and cornstarch in a mixing bowl. Coat the chicken pieces in the cornstarch and egg mixture.
STEP 2. Heat the oil in a large skillet over medium-high heat and brown the chicken quickly in the pan. Note: Don’t cook the chicken through; get a little color on each side.
STEP 3: Place the browned chicken in the slow cooker.
STEP 4: Combine the BBQ sauce, pineapple juice, and brown sugar in a mixing bowl.
STEP 5: Pour the sauce over the chicken and stir everything to combine.
STEP 6: Cover and cook on low for 3-4 hours. Check and stir halfway through. Slow cookers cook differently, so make sure to stir them so your slow cooker doesn’t run too hot and burn the sauce.
STEP 7: Garnish with scallions and serve over rice or mashed potatoes.

Can I Use Other Cuts Of Chicken?

Yes. You can use boneless skinless chicken breasts or boneless skinless chicken thighs cut into bite-sized pieces.

Can I Make Shredded Chicken Instead?

Yes. If you prefer a shredded version of this recipe, use whole, boneless, skinless chicken breasts or boneless skinless chicken thighs instead of cutting up chicken tenderloins. You can place the raw chicken breasts or thighs into the slow cooker without needing to sear them in a skillet, which makes the recipe even more accessible since there’s no chicken prep.

Once in the slow cooker, continue with the recipe as written. Remove the chicken to a plate and shred it with two forks. Place the shredded chicken back in the slow cooker and stir with the remaining sauce to coat the chicken before serving.
