Easy Taco Soup

Simple ingredients make this delicious Taco Soup. Have it on the table in a little more than an hour. This recipe has similar ingredients to chili but is filled with all the favorites you’d get in a taco.

Like my Best Chili, this Easy Taco Soup is the perfect bowl of comfort food for cooler weather!

We love Mexican food in our home, from Chicken fajitas to Spicy chicken tacos with avocados or even cheesy baked tacos, Mexican-inspired recipes are always on rotation. This taco soup is a great substitute for Taco Tuesday when you want tacos yet something hot. The ground beef combined with corn, peppers, and tomatoes, loaded with beans for protein is such a great combination of flavors.

Are you a fan of tacos? You will love this simple and delicious soup. Taco Soup is an easy, hearty soup with ground beef, taco seasoning, chili beans, tomatoes, and corn with broth veggies that can be made in just minutes.

As this recipe uses a lot of canned ingredients like beans, tomatoes, or corn and it’s very likely you already have these in your pantry, it comes in very handy when you’re short of cooking ideas.

Ingredients:

  • ground beef
  • onion
  • corn
  • chili beans
  • diced tomatoes with chilies
  • beef broth
  • water
  • taco seasoning

In a large Dutch oven or stockpot, brown ground beef. Add onion and cook until translucent.

HOW TO MAKE EASY TACO SOUP

  • In a medium skillet, cook the ground beef browned over medium heat.
  • Drain, and set aside.
  • Place the ground beef, onion, chili beans, diced tomatoes, corn, broth, and diced tomatoes with chiles, water, and taco seasoning in a large soup pot.
  • Mix to blend, and simmer for at least an hour.

Add corn, chili beans, diced tomatoes with chilies, beef broth, water, and taco seasoning. Stir to combine.

For all Mexican food lovers, this soup will remind you of a delicious beef chili but brings in everything that is usually found in tacos and the same flavors: salsa, chili, beans, ground meat, corn, etc. It is just thinner and great for dinner.

Cook over medium heat until soup comes to a boil, then reduce heat to low. Cover and allow soup to simmer for at least an hour.

No matter how you plan to modify this taco soup recipe, start by browning a pound of ground beef in the bottom of your Dutch oven or stockpot. No need to dirty up a skillet just to brown your ground beef! Make this beef taco soup a one-pot meal by cooking everything in the same pot. Fewer pans and dishes to clean!

  • Favorite taco soup toppings are cilantro, sliced jalapeno, green chiles, olives, shredded cheese, sour cream, avocado, and tortilla or corn chips.
  • Other preferred toppings are with yogurt, chopped green onion, or hot sauce. This is a win for all the family, as you can use any leftovers you have while customizing everyone’s plate differently.
  • Lime wedges are delicious as well.
  • Set out other sides like tortilla chips, corn chips, or cheese quesadillas.

VARIATIONS ON THIS EASY TACO SOUP

  • Serve With: Serve up Taco Soup with some avocado, tortilla chips, a dollop of sour cream, or crushed-up tortilla chips or corn chips. You can make it more hearty by stirring in cooked rice. You can also sprinkle some shredded cheddar cheese over the top to make it even creamier.
  • Veggies: Make Taco Soup even more healthy by adding veggies like okra or bell peppers. Try garnishing with green onions for a crisp layer of flavor.
  • Hot: Do you love spicy foods like me? Taco Soup goes well with hot peppers, and you can make the soup really hot by adding some chopped jalapeños or habaneros, chili powder, or green chilies.
  • Spices: Add some cumin, garlic powder, paprika, or any other spices that you like.

HOW LONG DOES TACO SOUP LAST?

  • Serve: Don’t leave your Taco Soup out for longer than about 2 hours before putting it away. If you leave it out too long the soup will start to grow bacteria that can make you sick.
  • Store: Always allow the soup to cool to room temperature before you put it in the refrigerator. In a sealable container, the Taco Soup can last about 3 days. After that, it’s time to throw it out and make more.
  • Freeze: The soup will stay good for 3 to 4 months, as long as you properly seal it. This  Taco Soup recipe keeps really well in the freezer. Fully defrost in the refrigerator before reheating in the microwave. You can store the Taco Soup in a deep pan and reheat it by heating the pan on the stovetop. Warm it over medium heat, stirring occasionally.

TACO SOUP TIPS:

  • Canned beans are easier to use, though, if you have dry beans, just soak them in water overnight and they’ll be good.
  • You can use homemade or store-bought taco seasoning. The advantage of homemade seasoning is that you can create your own favorite flavor by adding more or less of each ingredient. It’s also super easy to make and the chance is you already have the ingredients.
  • You can replace the beef broth with chicken or vegetable broth. You can add beef broth or beef bouillon to add a beef flavor without actually using it.
  • If you have unexpected guests, you can easily double or triple it by adding more broth.
  • The vegetarian version will have no meat and uses vegetable broth. You can add another can of beans for more protein or add more vegetables for more bulk. You can use potatoes, carrots, or bell peppers as well.

If you can't find store-bought taco seasoning in a packet, use this recipe:

Taco Seasoning:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 Tablespoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon oregano
