The only thing better than apple pie is apple pie with a cinnamon roll crust! This easy recipe only takes 20 minutes to prepare and can be served for breakfast or dessert or both!
It’s one of my favorite seasons in Maine…apple picking season! I am always over-zealous when it comes to picking apples! My favorites are Honey Crisp, Gala, Macintosh, and Pink Lady apples. My mind starts racing trying to decide what to bake first…apple pie, apple pie bars, apple cake, apple sticky buns?
Hiding the apples isn’t an easy task for a family of four, since I would rather my family indulge in a juicy crisp apple than a greasy bag of chips, so I sneak a couple into the cupboard for safe keeping until the creative juices start kicking in. Apple cinnamon Bundt cake with a glaze is always wonderful. Apple crisp always disappears too quickly…perfect out of the oven with a big scoop of vanilla ice cream!

We are a bulk buying family, especially when it is seasonal. Now it is apple season! When I asked hubs what he would like me to bake with the many pounds of apples we just purchased, he said in excitement, “Apple Pie! ” I have a wonderful recipe that I have been wanting to bake from Taste of Home, this is a double pie recipe, that can be cut into bars. Flaky, buttery, crumbly apple pie, but baked in a rectangular dish. It’s perfect warmed with a scoop of vanilla ice cream or drizzled with a caramel sauce.
Apple Pie Bars
3 cups all-purpose flour
1-1/2 cups old-fashioned oats
1-1/2 cups packed brown sugar
3/4 teaspoon baking soda
1-1/4 cups cold butter, divided
5 to 6 cups thinly sliced peeled Apples
1 cup sugar
3 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract
I added 2 teaspoons of cinnamon
In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13-in. x 9-in. baking dish. Arrange apples on top, sprinkle cinnamon over apples; set aside.
In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly; spread over apples. Sprinkle with reserved crumbs.
Bake at 350° for 35-45 minutes or until top is lightly browned. Yield: 3-4 dozen.

|Wild Maine Blueberries are tender, small and sweet. Blueberries are one of the most healthiest of foods, full of antioxidants. The leaves and the stems have even more antioxidants, so no need to pull them out. I have been storing away blueberries since August knowing that the season will end.|
|Use fresh or frozen blueberries for your pie. If you are using frozen, it is not necessary to defrost them completely.|
|Basic Pastry dough for a 9 inch two – crust pie. Four ingredients, flour, salt, shortening and water.|
|Cloudy Day pie deserves clouds on top. Beat an egg and brush the top, and bottom of the clouds so that they stay on the pie, brush the egg on to the whole pie.|
|Bake until pie is bubbling and crust is golden brown, about 60-70 minutes. Cover with foil if pie starts to get too brown.|
