These adorable mini apple pies are perfect when you need a single-serve tasty treat. Just like a full-sized pie, the miniature crust holds deliciously spiced bites of fresh apples that are topped with holiday-shaped pie crust cutouts.

Petite desserts are amazing for parties or a quick grab and go treats where you don’t want to fuss with cutting into a large pie and transferring it to a plate. These mini apple pies skip all of that since they are self-contained in their own little pie pan. Plus, they’re super simple to assemble and take only 20 minutes to bake!

You can make your own dough or use store-bought dough. This recipe takes a brilliant shortcut and uses pre-made mini graham cracker crusts and a store-bought regular-sized crust that you’ll thaw and use for the topping cutouts. For the filling, you’ll core a fresh apple, cut it into bite-sized pies, and add cinnamon and brown sugar. This recipe makes 2 mini apple pies, but you can see how easy it would be to double or even triple this recipe.

Since one apple makes 2 mini pies, you can easily double, triple, or even quadruple the recipe to make these as a cute take along with dessert. These mini pies also make great treats for a lunch box for kids or adults.

What are the best apples to use for baking a pie?

Here, I’ve used a Granny Smith apple which is always a solid choice for baking. They’re a little tart which makes them perfect for adding spices and sugar without becoming too sweet. Feel free to experiment with other varieties, though. Try Honey Crisp, Pink Lady, and Golden Delicious. You can even mix varieties for a more complex flavor.

Do I need to cook the apples to make the filling?

No, not in this recipe. That said, if you’re looking for a softer filling you can certainly heat the apple chunks in a skillet for a few minutes with a little butter to soften them up. If you do this, you may want to use more than one apple since they will cook down a bit. Make sure you don’t cook them for too long or you’ll end up with applesauce!

Items needed to make mini apple pies

1 Granny Smith apple (or a variety of your choice)

1 tablespoon brown sugar

1 teaspoon cinnamon

1 pie crust; either some from a frozen-thawed to room temp or make your own

2 Keebler mini graham cracker pie crusts

How do I assemble these mini apple pies?

  1. Bring pie crust to room temperature. Roll out and with a small candy cane and tree cookie cutters cut the dough. Set aside.
  2. Cut apple with an apple corer. Remove the core and peel the skins from the apple. Chop into smaller pieces and place in a bowl.
  3. Mix in brown sugar and cinnamon. Toss well and fill up pie crusts with the apples. They will shrink so overfilling is great.
  4. Top off with pie crust pieces and cinnamon.
  5. Bake at 350 degrees F for 20 minutes or until tops are golden. Serve with ice cream or topped with whipped topping for individual size desserts.

These mini apple pies will be a hit any time of the year for any occasion. Fancy them up with a dollop of whipped cream on top with a little sprinkle of nutmeg or cinnamon for good measure. They’re awesome right out of the oven while still warm. If you have one leftover, stick it in the fridge and enjoy it cold the next day. These little wonders are an irresistible way to enjoy apple pie in miniature form.

Ingredients

  • 1 apple; type of choice I used Granny Smith apples
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 pie crust; either some from a frozen-thawed to room temperature or make your own
  • 2 Keebler mini graham cracker pie crusts

Instructions

Notes

OPTIONAL:

Homemade Pie Crust Recipe

Makes one 9 inches deep dish pie crust

  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/3 cup vegetable shortening
  • 2-3 TBSP cold water

Directions

  1. Combine flour and salt in a medium bowl, cut in vegetable shortening with a pastry blender or two knives until mixture is crumbly.
  2. Sprinkle with water, blend until mixture holds together.
  3. Shape dough into a ball, place on a lightly floured surface.
  4. Roll out dough to 1/8 inch thickness.
  5. Line pie plate with pastry.
  6. Turn edge under, crimp edge as desired.
