Irish Apple Cake with Whiskey Cream Sauce

Irish Apple Cake is a deliciously moist cake with a surprise crunchy top and a rich whiskey cream sauce drizzled all over.

Every St. Patrick’s Day we like to start off the celebration with a warm and delicious St. Patrick’s Day Irish Coffee. I usually have a Baked Corned Beef and Cabbage for dinner simmering all day. There’s always enough for friends and family and guests that stop by. Chocolate Stout Cake with Whiskey Buttercream Frosting is also an incredible cake to keep the celebration going. It is a beautiful dessert and is so delicious.

This really is the ultimate Irish Cake. The whiskey cream sauce is a showstopper. It’s perfect with a cup of tea or a glass of milk. This really should be called an apple bread recipe, but since it has some sugar sprinkled on top, it is referred to as a cake. Looking at the directions, it may seem odd that it’s not going to turn out as a delicious cake, but let me tell you, it is a favorite cake and always popular around St. Patrick’s Day.

This is a special cake that doesn’t take a long time to make or bake, so it can be made in about an hour’s time. The ingredients are pretty basic and you may have them in the pantry, so there is no need to bring the butter to room temperature, you will need it to be cold for this recipe. If you have a Cuisinart or food processor, it makes it a bit easier to make this cake. But it can still be made without one. Our ancestors didn’t have all of these fancy gadgets and their cakes were amazingly delicious.

The whiskey cream topping just puts this cake over the top incredibly delicious! I have also used this topping for apple pie, wow, it is wonderful. If you would like to omit the whiskey, you can always substitute Vanilla as a replacement. Either way, it makes a great presentation, serving the cake and then drizzling the topping at the table, you will wow your guests.

Ingredients to make Irish Apple Cake:

Cake

  • 3 1/2 cups all-purpose flour
  • 3/4 cup unsalted butter, cold
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 3/4 cup granulated sugar, plus 2 tablespoons
  • 2 eggs
  • 1 cup milk
  • 5 apples, peeled and sliced in thin pieces

Whiskey Cream Topping

  • 1/2 pint heavy cream
  • 1/2 tablespoon unsalted butter
  • 12 ounces white chocolate
  • 3 teaspoons Irish whiskey

Directions:

Preheat oven to 350 degrees.

Combine butter and flour in a food processor and blend until crumbly.

Transfer butter and flour mixture to a large mixing bowl.

Add baking powder, salt, cinnamon and 3/4 cup of sugar and stir to combine.

Mix in eggs and milk and stir until all ingredients are well mixed in.

 

Peel and slice apples.

Grease and flour a 10-inch spring-form pan. 

On a floured surface, roll out half the dough to a 10-inch circle. Put in the spring-form pan.

Top with apples, and then the second half of the dough.

Bake for 45 minutes or until a toothpick inserted in the cake comes out clean.

To make the topping, heat heavy cream and butter over medium heat until just boiling, while stirring frequently.

Add white chocolate and Irish whiskey to a mixing bowl. Pour hot heavy cream over the white chocolate and stir until the chocolate has completely melted. 

Slice and serve with sauce. This cake is so easy to make and not overly sweet. I am happy to have this cake as breakfast or dessert, it has the lightness of a scone and gooey apple pie filling which is tremendous. 

 

What kind of apples should I use for an Irish Apple Cake?

I have tried Granny Smith apples, Red Delicious and Honeycrisp, all work really well for this recipe.

 

How do I store the Irish Apple Cake?

Wrap well and store in the refrigerator for longer storage time.

 

How long does the Irish Apple last?

This cake lasts 4-5  days stored in the refrigerator.

 

Can I freeze the Irish Apple Cake?

Yes, wrap well with saran wrap and then foil before adding the Whiskey Cream Sauce.
