Make sure when you go to roll the dough that you follow the directions and roll the dough between two sheets of baking parchment paper.
Roll the dough evenly so that each cut-out is the same thickness. This will ensure that each cracker bakes the same rather than any thinner ones burning and crumbling. If unsure, trim off the thinner edges of the dough before you begin cutting with the cookie cutter.
Do I have to use a cookie cutter to cut the dough?
No, you don’t. You can just cut the dough into squares using a pizza cutter if you prefer. However, if you do use a cookie-cutter, feel free to use any shape you desire.
Seasoning variations

Ingredients
2 cups of all-purpose flour
1 teaspoon of baking powder
½ teaspoon of salt
A pinch of black pepper
5 tablespoons of olive oil
¼ cup + 3 tbsp of water
Coarse sea salt to sprinkle on top
Instructions
- In the bowl of your stand mixer, fitted with the paddle attachment, combine flour, baking powder, salt, and black pepper.
- Add the olive oil and water. At low speed, beat to make a smooth dough. It takes only 2 to 3 minutes.
- Wrap in clingfilm and place in the fridge for 1 hour.
- Preheat the oven to 400°F
- Roll out the dough to 1/10 inch (3 mm) thick between two sheets of baking parchment
Note: it’s better to use baking parchment instead of adding flour to roll out the dough. Adding too much flour can change the texture of the dough. - Use a heart-shaped cookie cutter to make the crackers.
- Place the crackers on a baking tray lined with baking parchment.
- Sprinkle with the coarse sea salt and bake for 12 to 15 minutes, until golden and crispy.
- Let them cool on a cooling rack.
