Easy Homemade Cornbread

Golden brown on the outside and moist and buttery on the inside, cornbread is a favorite side item for just about any meal. Made from scratch, this easy cornbread recipe will become your new favorite. It’s quick, simple, and outrageously delicious!

Cornbread is classified as comfort food in this household, so it gets made often! It’s so simple to make and this recipe is an easy one that uses applesauce instead of any additional oil in the mix. Along with the butter, it’s a great way to keep the cornbread moist and scrumptious.

Sure, you could buy a box mix, but why do that when you can make a homemade version that requires just 5 steps and common pantry ingredients? Plus, you know what’s going there and can keep things fresh, gluten-free, and organic if that’s a concern for any dietary needs.

What type of cornmeal should I use?

Grind: I use the medium grind cornmeal because I like the texture. You can also use a fine grind, but you’ll get a less dense texture. Both work well for this recipe, so experiment to see which you prefer.

Color: Again, this is preference. I typically reach for yellow cornmeal as opposed to white, just because I associate yellow with classic cornmeal. Honestly, it doesn’t matter — they both work fine and taste yummy!

Can I make cornbread muffins with this recipe?

Yes, you can! All you need to do is swap out your baking dish or pan with a muffin tin. Be sure and grease the muffin tin wells before adding the cornbread mixture.

Typically, muffins do not need to be cooked as long as cornbread in a pan. Because of this, check your muffins at around the 12-15 minute mark. Insert a toothpick or sharp knife in the center of a muffin to test for doneness.

Variations and add-ins

This easy cornbread recipe is your standard, straightforward mix that’s awesome on its own. However, if you’re making cornbread to go with a specific meal, you might want to jazz it up in the taste department. Here are a few suggestions:

  • Cheese: stir in shredded cheddar cheese
  • Spicy: stir in diced jalapenos
  • Peppers: stir in diced green and/or red peppers
  • Corn: stir in corn kernels; fresh or canned (drained)
  • Onions: stir in scallions or chopped onion of your choice
  • Fruit: for a touch of sweetness, you can add in blueberries or chopped fresh strawberries

How to serve cornbread

I like to serve cornbread with soup, stew, chili, and even as a substitute for bread with a hearty salad.  Cornbread also makes a great addition to holiday stuffing.

One of my favorite ways to eat cornbread is straight out of a warm oven, slathered with butter and a drizzle of honey. I have to stop myself before I eat the whole pan! It’s equally delicious the next morning if I toasted it under the broiler with a little butter and then add my favorite jam or jelly to it.

How to store cornbread

Any leftovers should be stored in a tightly sealed container at room temperature for 2-3 days. You can also freeze cornbread. Be sure and cut it into single-serve sections before freezing. Use parchment paper between pieces if layering to freeze.

Thaw at room temperature before reheating. To reheat in the oven, wrap in foil and heat for 10 to 15 minutes at 350°F.

1/3 cup of butter

3/4 cup of applesauce

1 egg

1 cup of flour

1/2 cup of cornmeal

1/2 teaspoon of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

Instructions

  1. Start by beating together your sugar and butter.
  2. Add in applesauce and egg, beat until smooth.
  3. Add in flour, cornmeal, baking powder, baking soda, and salt.
  4. Mix until batter forms, and all ingredients are well combined.
  5. Pour batter into a well-greased 8×8 baking dish.
  6. Bake at 375, for 25 minutes, or until the toothpick comes out clean.

I've ever thought about adding applesauce to my cornbread! What a great idea. Although I'm from the south I always add sugar to my cornbread. I really get some negative remarks about it, but I just tell them, well, you've got two choices, 1, either eat it or 2, don't because that's the way I make it and I'm not changing the recipe! Lol!
