What Is A Key Lime?
Key limes differ from the classic green limes. They’re smaller and have thinner skin than regular limes. This makes their shelf life limited. They don’t store well and should be used within a few days of buying. While these limes are named after the Florida Keys, they are cultivated throughout Florida and parts of California. In Mexico, they are available year-round. Their juice is known for its intense tartness and aromatic qualities. This makes them perfect for desserts like Key lime pie, cupcakes, and poke cakes.

Can I Use Bottled Key Lime Juice?
Absolutely! Use your favorite brand of key lime juice. I pick up a key lime or two. You can also use a regular lime. I use them for the lime zest in the recipe and the garnish on top of the poke cake.

How To Poke Holes In The Cake
To create holes in the cooled cake, use a large straw or the end of a wooden spoon. The holes should be large enough for the creamy mixture to penetrate the cake. It should not just sit on top. Be sure and space the holes far enough apart to prevent the cake from becoming overly soggy. Additionally, be careful not to poke through to the bottom of the cake. You want to keep the base intact to avoid any leaks.

Can I Use A Different Topping?
Yes. Cream cheese works well. Let it sit out for a bit to soften before you spread it on top.. You can also use vanilla frosting, either store-bought or homemade.

Flavor Variations
Try any of these other delicious ideas. Swap out the cake mix flavor. You can also use different citrus juices in the filling mixture.
- White, yellow, or lemon cake mix with lemon juice instead of lime. Garnish with lemon slices and lemon zest on top of the whipped topping.
- White or yellow cake mix with pineapple juice. Garnish with pineapple tidbits and toasted coconut on top of the whipped topping.

Is This Cake Freezer-Friendly?
Yes. Make the cake, poke holes in it, and pour the creamy lime mixture over the top. Do not add the whipped topping. Be sure to wrap the cake tightly for freezing. Store the cake in the freezer for up to 2 months. Thaw in the refrigerator before adding the whipped topping and garnishes.

Storage
Store leftovers in the refrigerator, covered, for up to 3 days.
