Red Velvet Poke Cake & Video

This dreamy, fluffy, luscious red velvet cake is the best dessert for any occasion.

Have you ever tried a Red Velvet Cake before? Is it just a southern thing or what? I really don’t know, but all I know is HOW DELICIOUS IS THIS POKE CAKE??!! I know the first time that I tried this delicious cake, I almost fell over! I thought, where has this cake been all my life??! So if you haven’t tried this cake before like I had, I will let you in on the secret, make it today!!

I was at a Valentine’s Day evening party, it was back tie, and everyone was dressed to the nine’s. Our hostess served an enormous heart shaped red velvet cake, it was absolutely gorgeous. Of course I took a million pictures. I had a thin slice, it was incredible. I had to remake her recipe. So here you go, my recipe for Red Velvet Poke Cake.

Now, I saved a few steps and used a cake mix, I know, sometimes I am in a rush and not a purist, but I seriously couldn’t tell the difference, it was so moist and creamy and super yummy!

This cake is perfect for Christmas, Valentine’s Day or even Mother’s Day! Haven’t decided what to make your Mom, Grandma, Aunt, Sister or best girlfriend for Mother’s Day yet? Make this cake!!

Let’s make the cake!

Mix together cake mix according to package instructions.

Spray a 9×13 pan with nonstick cooking spray.

Pour batter into pan and bake according to time on package.

When cake has finished baking, and a toothpick inserted in the middle of the cake comes out clean, remove from oven and let cool.

Poke holes in the cake with the round end of a wooden spoon or something similar in size.

In a saucepan over medium low heat, melt the white chocolate with the heavy cream, stirring often. Mixture will thicken as it cooks. Cool for 5 minutes and then pour over the holes in the cake.

With a hand held mixer, beat the cream cheese until smooth. Mix in ½ of the whipped topping. Scoop into a piping bag and then pipe into the holes on the cake. Scoop remaining mixture over the cake and spread over the top of the cake.
