Very excited that it’s strawberry season here! Who else gets excited to go strawberry picking?! This recipe for Strawberry Shortcake Cake is one of my most-requested recipes from family and friends. It’s a super fun take on the Strawberry Shortcake recipe.
YELLOW CAKE, CREAM FILLING, FRESH STRAWBERRIES
We start with a yellow cake (from a cake mix) as our base. Top that with sweetened cream cheese. Next, we add fresh strawberries to a pre-made strawberry glaze and spread it on top. This cake is not only beautiful but it tastes amazing. Just make sure to have the recipe on hand – everyone will go bonkers for this recipe and request it!

- 4 oz cream cheese, softened
- 3 eggs
- Strawberry Poke Mixture
- 1 1/2 cups sliced fresh strawberries
- 1/4 cup granulated sugar
- 2 teaspoons lemon juice
- Cream Cheese Glaze
- 3/4 cups powdered sugar
- 2 tablespoons butter, softened
- 1 oz cream cheese, softened
- 1 to 2 tablespoons milk
- 1/4 teaspoon vanilla
- Garnish
- 1 cup sliced fresh strawberries

Hi Nettie; Thank you very much. That seemed to work. This morning the puree absorbed more into the cake and hardened on top and the glaze came out perfect. Now for the taste test but I think it will be yummy!

Hi I am making this now and am having a bit of a problem. I followed the recipe exactly. The strawberry puree is just sitting on top of the Bundt cake. I am letting it sit in the refrigerator overnight to see if it goes into the cake but at this rate, I don't see how the frosting is going to spread properly without it just being a big mess on top and mixing with the puree.

Merry Christmas!
Try poking bigger holes in the cake with the end of the wooden spoon, freeze the cake if the puree doesn't pour down the holes. When the puree hardens a bit, top with the frosting.

I've made poke brownies but never a poke cake---mostly because they always seem to require Cool Whip. Now yours is one I'd love to try!!! Gorgeous and perfect for spring!
