Pineapple Pecan Pound Cake

Flavorful and moist pineapple pecan pound cake with juicy, tart pineapple and crunchy pecans topped with a cream cheese frosting.

The flavors of this pineapple pecan pound cake will have your family begging for more! The pineapple, pecan, and cream cheese frosting are such a wonderful combination, so when my kids walked into the kitchen, they were so excited for dessert. This cake smells amazingly delicious!

Start by placing all ingredients besides icing in a large mixing bowl.

  • Mix with a hand mixer until well combined. 
  • Grease a bread loaf pan, and pour the batter in. Filling it a little under halfway. Bake at 350 degrees for 25 minutes. Turn heat down to 225 and place on the top rack. Bake an additional 20 minutes, or until the cake is baked through, and a toothpick comes out clean. Let cool. Place icing on top and slice. 

This cake recipe is uncomplicated and so delicious! This cake comes out extremely moist and yummy and is a snap to whip up. It is especially good when topped with a cream cheese frosting.

This cake comes together in a snap! It’s very dense and satisfying. The cream cheese frosting is a perfect compliment. Although, you could easily serve it as a coffee cake without the frosting.

This cake was such a HUGE hit with my family. I made this cake three times in less than a month! One time for a brunch party, the other two times on the weekend because they loved it so much!

What is a Pound Cake?

A pound cake is traditionally made with equal parts butter, sugar, eggs, and flour. Pineapple Pecan Pound Cake is just a wonderful variation!

What size pan(S) do you use? Fill under halfway or three-fourths full.

Hi Mary,

I use a bread loaf pan measuring 9" x 5" for this Pineapple Pecan Pound Cake. I fill the pans with batter 3/4 full.

Why does the directions say to only fill the pan less then half way?? Why make so much batter if it doesn't get used?

When baking, you fill pans 3/4 so that batter doesn't overflow.
