Even though this festive 3-layer cake is a showstopper, especially once you cut into it to reveal the layers of red and blue cake with a creamy white cheesecake layer sandwiched in between, it’s pretty simple to make.
The cheesecake layer is a no-bake effort that you mix and refrigerate overnight to be ready to place between the 2 boxed cake mix layers. You can make the frosting yourself or take a shortcut and use prepared frosting. Once assembled, decorate the top and it’s ready to serve. It’s just that easy!

Boxed Radiant Red Cake Mix – plus the ingredients needed to make it (2 eggs, oil, and water). If you can’t find red cake mix, use a white cake mix and tint it with red gel food coloring.
Boxed Aqua Blue Cake Mix – plus the ingredients needed to make it (2 eggs, oil, and water). If you can’t find a blue cake mix, use a white cake mix and tint it with blue gel food coloring.
Frosting
Cream Cheese – softened
Butter – use unsalted and softened
Powdered Sugar – for sweetness and texture
Vanilla Extract – for flavor
How To Make Red White And Blue Cake

STEP 1: Make the no-bake cheesecake layer the day before to let it chill and set it up in the refrigerator overnight. Cream together all the cheesecake ingredients, pour into a springform pan, and refrigerate overnight.
STEP 2: Make the cake layers using red and blue boxed cake mixes, or use a white cake mix and add blue and red gel food coloring. Make according to the boxed instructions. Let the cakes cool completely before assembling.

What If I Can’t Find The Boxed Red And Blue Cake Mixes?
If you have trouble locating boxed red and blue cake mixes, just use a boxed white cake mix and tint each layer with red and blue gel food coloring. You could use a red velvet cake mix for the red, but I find that it comes out too dark of a shade. If you use a white cake mix, you can start slowly by adding the food coloring to achieve just the right shades of red and blue.
How To Assemble The Cake
Once all the layers have been made, chilled, and cooled, start with the red cake layer as the base, followed by the cheesecake layer. Top it with the blue cake layer. Now it’s ready to frost and decorate.
Can I Use Prepared Frosting?
Absolutely! I love shortcuts, after all! If you don’t want to make the vanilla frosting yourself, pick up 2 or 3 canned vanilla frostings. I like to have extra on hand to make sure I’m covering the entire 3 layers of cake!
Decoration Ideas
Once the cake is frosted with white vanilla frosting, choose red, white, and blue-themed decor to give it an extra festive look. Here are some ideas:
- Add drained maraschino cherries, with the stems still on, around the top periphery of the cake.
- Garnish the top and/or side edges with red white and blue sprinkles or sanding sugar.

Ingredients
- Cheesecake Layer:
- 3 (8 ounce) packages cream cheese, softened
- ½ cup granulated sugar
- 2 teaspoons vanilla
- 1 cup heavy whipping cream
- Cake Layers:
- 1 (6.25 ounce) package Radiant Red cake mix, baked to package instructions (2 eggs, oil and water)
- 1 (6.25 ounce) package Aqua Blue cake mix, baked to package instructions (2 eggs, oil and water)
- Frosting:
- 8 ounce packages cream cheese, softened
- ½ cup butter, softened
- 4 cups cups powdered sugar
- 2 teaspoons vanilla
Instructions
- Gather all of the ingredients to make the cheesecake.
- Line an eight-inch round cake pan with parchment paper (bottom and sides), or an eight-inch springform pan.
- Cream together cream cheese and sugar until smooth, with a hand-held mixer.
- In a standing mixer, whip heavy cream until thick.
- Stir whipped cream and vanilla into the cream cheese and sugar mixture until smooth.
- Pour the cheesecake filling into the pan, and smooth out the top.
- Refrigerate for 12 hours (or overnight).
- Gather all of the ingredients to make the cake mixes.
- Prepare both cake mixes as directed by package instructions, to make 8-inch cakes, one red, and one blue.
- Let cakes cool completely (or overnight), before layering.
- Layer Cakes with the cheesecake layer in the middle.
- Prepare frosting by creaming together butter and cream cheese. Then mix in powdered sugar and vanilla.
- Liberally apply frosting to the top, while lightly frosting the sides of the cake.
