This easy Rolo Cheesecake Brownie Bars recipe will elevate your brownies to the next level. You’ll be amazed at how simple it is to make! I use a boxed brownie mix to help things along, and the cream cheese layer is a breeze to make, too. The only thing that takes a little time to do is cut the rolo candy in half, but you won’t mind that part, primarily if you treat yourself to a bite or two while you’re doing it! Who can resist?
These impressive brownies are the chocolatey dessert you want to make for holidays, birthdays, special events, or when you can’t decide between brownies, cheesecake, or caramel candy. This recipe is the perfect compromise that includes all three! Plus, it’s always an instant hit, no matter the occasion.

Can I Make The Brownie Layer From Scratch?
Certainly! If you have a favorite basic brownie recipe, use that, or you can use the one included in my Holiday Brownies recipe.
Can I Use A Different Candy?
Instead of rolos, you can always add other chocolate candy that you can quickly chop for a different flavor. Try the recipe using mini Reese’s cups, Snickers, Almond Joys, Twix, M&M’s, or Hershey’s Kisses.
How To Decorate The Brownie Bars
While this recipe calls for melted chocolate wafers and caramel sauce to be added to piping bags to decorate the top of the baked brownies, you can always use a ziploc bag with the tip end cut off or even drizzle the warm chocolate and caramel on with a spoon.
How To Serve
Consider baking these brownies in a round springform pan for a different way to bake and serve them. This way, you can serve and slice them like cheesecake. This is a great idea, especially if you’re making it for a party—it just makes the presentation a little more special. Also, if you want to take these brownies over the top, add a scoop of vanilla ice cream when serving. Swoon!
Storage
Store the brownies, tightly covered or in an airtight container, on the countertop for several days or in the refrigerator for 4-5 days. You can also freeze them in a freezer-safe container or individually wrapped for up to 3 months. Thaw in the fridge or on the countertop before serving.
