Snickerdoodle Bars

If you love snickerdoodle cookies, you’ll adore these easy to make snickerdoodle bars. They have that classic cinnamon and sugar flavor but in a blondie bar form, that’s buttery, soft, and chewy.

Snickerdoodle Bar

You’ll be amazed at how simple these snickerdoodle bars are to make. In fact, they’re actually easier to make than snickerdoodle cookies! There’s no chilling the dough and then scooping it and rolling it in the cinnamon-sugar mixture to mess with. That’s all great if you have the time. However, this snickerdoodle bar recipe will give you that same sweet flavor that you’re craving, but in a lovely bar form in half the time!

Snickerdoodle Bars

In fact, I bet you could open your pantry right now and find every single ingredient that you need. You’ll need a large mixing bowl and either a wooden spoon or a hand mixer to beat all the ingredients together before spreading it out in a baking pan. You’ll add the cinnamon and sugar mixture on top before sliding it into the oven.

Snickerdoodle Bars

As these snickerdoodle bars bake you’ll be treated to the most amazing aroma that will have you impatiently waiting for them to be done! As you let them cool on your countertop before slicing, plan where you will hide your little secret stash of these swoon-worthy snickerdoodle bars because as soon as the family smells and sees these, they’ll be gone in a flash!

Snickerdoodle Bars

Oh, and if you’re making these for the holidays, they make awesome gifts for friends and family. They’re also equally appropriate for potlucks and picnics – any time of the year!

Snickerdoodle Bars

Recipe tips

  • Make sure your butter and egg are at room temperature.
  • Take care not to over-bake these. Remember, as they cool on your countertop in the warm pan, they will actually cook a little bit more.
  • Let them cool completely before slicing so that the bars stay intact.

How To Store these Snickerdoodle Bars

You can store these at room temperature, sealed in a container, for up to 7 days. You can also store them in the refrigerator if you prefer, although it’s not necessary.

Are these Snickerdoodle Bars freezer-friendly?

Yes, they are. Just let the bars cool completely before slicing. Transfer the cut bars to a freezer-size plastic ziplock bag with parchment paper in between each row to keep them from sticking together as they freeze. They will keep in the freezer for up to 3 months. You can easily reheat each individual bar in the microwave for 20 seconds at a time until warm.

Ingredients

Bars:
½ cup unsalted butter softened
1 cup granulated sugar
1 egg-room temperature
1 teaspoon vanilla extract or ½ teaspoon almond extract
½ teaspoon salt
1 cup all-purpose flour

Topping:
3 Tablespoons granulated sugar
1 teaspoon ground cinnamon, can add extra if you like it cinnamon

Directions

  1. Preheat the oven to 350˚F. and line an 8×8 baking pan with parchment. Lightly grease or butter the parchment paper set aside.
  2. Cream together the butter and sugar.
  3. Add in the egg, vanilla, and salt. Beat to combine.
  4. Stir in the flour until it’s well incorporated.
  5. Spread the batter into the prepared pan.
  6. Mix the sugar and the cinnamon together in a small bowl and sprinkle over the top of the batter.
  7. Bake in the preheated oven for 25-30 minutes or until it’s lightly browned but not hard and over baked.
  8. Remove from the oven and cool in the pan for 10-15 minutes and then use the parchment paper to gently lift it out of the pan and set it on a cooling rack to cool completely.
  9. Cut into 12 bars and serve.
