You can store these at room temperature, sealed in a container, for up to 7 days. You can also store them in the refrigerator if you prefer, although it’s not necessary.
Are these Snickerdoodle Bars freezer-friendly?
Yes, they are. Just let the bars cool completely before slicing. Transfer the cut bars to a freezer-size plastic ziplock bag with parchment paper in between each row to keep them from sticking together as they freeze. They will keep in the freezer for up to 3 months. You can easily reheat each individual bar in the microwave for 20 seconds at a time until warm.
Ingredients
Bars:
½ cup unsalted butter softened
1 cup granulated sugar
1 egg-room temperature
1 teaspoon vanilla extract or ½ teaspoon almond extract
½ teaspoon salt
1 cup all-purpose flour
Topping:
3 Tablespoons granulated sugar
1 teaspoon ground cinnamon, can add extra if you like it cinnamon
Directions
- Preheat the oven to 350˚F. and line an 8×8 baking pan with parchment. Lightly grease or butter the parchment paper set aside.
- Cream together the butter and sugar.
- Add in the egg, vanilla, and salt. Beat to combine.
- Stir in the flour until it’s well incorporated.
- Spread the batter into the prepared pan.
- Mix the sugar and the cinnamon together in a small bowl and sprinkle over the top of the batter.
- Bake in the preheated oven for 25-30 minutes or until it’s lightly browned but not hard and over baked.
- Remove from the oven and cool in the pan for 10-15 minutes and then use the parchment paper to gently lift it out of the pan and set it on a cooling rack to cool completely.
- Cut into 12 bars and serve.
