Cooked Shredded Chicken – Store-bought rotisserie chicken is an excellent shortcut for shredded chicken. My easy homemade Instant Pot Whole Chicken is also perfect for shredding!
Red Onion – diced. Use a sweet onion for a less prominent flavor in the chicken salad.
Celery – diced to give the chicken salad a subtle crunch and bright flavor.
Hard-boiled eggs– are chopped to add texture and protein to the chicken salad.
Mayonnaise- helps moisten the chicken salad and gives it a smooth texture when mixed together.
Seasonings – garlic salt and black pepper.
Crescent Rolls – to create and bake the carrot-shaped rolls for the chicken salad.
Fresh Parsley – to decorate and garnish the top of the filled crescent rolls to resemble carrot tops.

How To Shape The Foil Molds

You’ll need 16 sheets of aluminum foil. Roll each sheet of foil from its shorter end into cone-shaped molds. If you have ice cream sugar cones, wrap the foil around them. This method creates uniform carrot-shaped molds. You can also buy pastry horn forms. Then, wrap the strips of crescent roll around them. This is an excellent choice for using aluminum foil molds.

How To Wrap The Carrot-Shaped Molds

  1. If you purchased crescent triangle rolls, press them together and then slice them into strips. You can, instead, buy the seamless dough sheets, which work best if you’re cutting into strips.
  2. Take the carrot mold and, starting at the pointed end, wrap a strip around the form, overlapping slightly. If the strip runs out, press another strip to the end that just ran out and continue wrapping the form. Cut any leftover strip off and set aside to use later, if needed.
  3. Bake the carrot crescents and cool completely before removing the foil molds. Use scissors to cut the foil molds and remove them more easily if needed.

Chicken Salad Carrot Stuffed Crescents

These Chicken Salad Stuffed Crescents will be your Spring table's hit.  A delicious, simple, flavorful chicken salad is stuffed into carrot-shaped crescent rolls with a bit of parsley on top to look like a carrot top.  These are so cute and festive for any Spring get-together. 

Ingredients

  • 3 cups cooked, shredded chicken
  • ¼ small red onion, diced
  • 2 celery stalks, diced
  • 2 hardboiled eggs, chopped
  • 1 cup of mayonnaise
  • ¼ teaspoon garlic salt
  • ¼ teaspoon pepper
  • 16 crescent rolls (2 eight count cans)
  • Parsley

Instructions

1. Preheat oven to 400 degrees.
2. Mix the chicken, onion, celery, eggs, mayonnaise, garlic salt, salt and pepper in a large mixing bowl.
3. Set in fridge to chill.
4. Meanwhile, mold 16 (12-inch) sheets of aluminum foil into cone shapes.
5. Slice each crescent roll triangle into strips.
6. Wrap the strips around the molds, making a carrot shape.
7. Bake for about 8 minutes until golden brown.
8. Set aside to cool completely.
9. Carefully remove the foil from inside the rolls. You can use scissors to help.
10. Stuff each crescent roll carrot with the chicken salad mixture.
11. Top with parsley to resemble a carrot top.
12. Serve!

Notes

Tips and Tricks
● Store the leftovers in the fridge for up to 3 days.
● Be patient while removing the foil from the rolls; they will come out.
● You can also use a foil-wrapped ice cream cone as your mold for the rolls.
● You can season the chicken salad up any way you like.
● You can fill these with any salad you like, tuna or egg salad, which would also be
delicious here.
