There’s no baking required, and the steps are super simple. You can even get the kids involved in making and decorating them!

Ingredients

Sweetened Shredded Coconut – forms the base of the coconut mice.
Confectioners’ Sugar – to sweeten the coconut mixture.
Sweetened Condensed Milk – Mix it with the coconut mixture. It helps to sweeten and hold it together.
Maraschino Cherries With Stems – to hide inside the coconut mice. Be sure to get the cherries with stems since the stem will be used as the mouse’s tail.
Chocolate Almond Bark – to dip the coconut mice in. I prefer to use almond bark rather than chocolate chips simply because it hardens once it dries. It’s perfect for candy.
Sliced Almonds – to create the mouse ears.
Sprinkles – to create the nose and eyes.

Directions

  1. In a large bowl, using an electric mixer, combine the shredded coconut, powdered sugar, and sweetened condensed milk until all are combined.
  2. Take about two tablespoons of the mixture and place a cherry in the middle with the stem out for a tail.
  3. Roll the mixture into a ball around the cherry, then taper the end to look like a mouse.
  4. Place on a parchment-lined tray, then repeat with the remaining mixture.
  5. Freeze all the mice for about 1-2 hours.
  6. When ready to dip, melt the almond bark chocolate in a microwave-safe container in 30-second increments, stirring after each increment, until smooth.
  7. Carefully dip each mouse into the chocolate, leaving the stem exposed.
  8. Place back onto the parchment paper and immediately add two sliced almonds for the ears and sprinkles for the eyes and nose.
  9. Serve!

How To Dip The Coconut Mice In Chocolate

  1. Prep – Make sure the shaped coconut mice have been frozen. Have your bowl of almond bark chocolate melted. Have a sheet of parchment paper ready to set the dipped coconut mice on.
  2. Dip – Using two forks, dip each coconut mouse into the bowl of melted chocolate. Tap off the excess, letting it drip back into the bowl. Place the coated mouse on the parchment paper. Repeat with the remaining coconut mice.

Variations

  • Coating: Replace the chocolate almond bark with white almond bark. You could also skip dipping in chocolate and instead, roll them in cocoa powder.
  • Inside The Coconut: Swap out a maraschino cherry for an almond, or omit altogether.
  • Flavors: If you omit any surprise ingredient in the center of the coconut mice, you can flavor the coconut mixture differently. Instead, choose from lemon, mint, or almond extract.
  • Tail: Instead of using the stem of the cherry for a mouse tail, use thin string licorice, or omit altogether.

How To Decorate The Chocolate-Covered Mice

  • For The Ears: Use sliced almonds. Position them and lightly press them into the chocolate before it hardens.
  • For The Nose and Mouth. Use round sprinkles or confetti-shaped sprinkles. Press them into the chocolate before it hardens. You could also dot them on using gel icing. You can also use mini chocolate chips for the nose and mouth.
  • Extra Decor: drizzle melted white or dark chocolate bark over the mice’s bodies.

Storage

Store leftovers in an airtight container in the refrigerator for up to 5 days.

  • 1/3 cup sweetened condensed milk
  • 12 maraschino cherries with stems
  • 1 pound chocolate almond bark
  • 1/4 cup sliced almonds
  • Sprinkles for nose and eyes
