This Crockpot Corn Dip is the ultimate set-it-and-forget-it appetizer! This delicious dip packs in all the flavor of sweet corn along with creamy, cheesy goodness, savory spices, and crispy bacon to take it over the top. The slow cooker does all the work, blending the flavors into a warm, melty dip that’s perfect for game days, parties, or casual gatherings. Serve it up with a sprinkle of extra crispy bacon crumbles on top and tortilla chips on the side for scooping. It’s a guaranteed crowd favorite!

This Crockpot Corn Dip has all the elements that make it a hit at any gathering. It’s warm and creamy with gooey melted cheese and a rich, flavorful blend of corn, spices, bacon, and more. That combination delivers all the right comfort-food notes – savory, slightly sweet, and utterly satisfying, which makes it hard for guests to stop at just one scoop!

I love making it because it’s practically effortless, and it’s easy to share and serve. Making it in the crockpot keeps the corn dip perfectly warm for hours, letting people snack at their own pace without worrying about reheating or it going cold. It pairs perfectly with chips, crackers, bread, or veggie sticks. This dip shines at just about any gathering – game days, potlucks, holiday parties, backyard cookouts, or casual movie nights at home. Make it soon!

Ingredients
Whole Kernel Corn – adds pops of sweet corn flavor and a pleasant, slightly firm texture that balances the creaminess of the dip.
Creamed Corn – brings extra sweetness and creates a creamy base.
Diced Green Chiles – provide mild heat and a subtle smoky flavor.
Sour Cream – adds tang and creaminess, helping lighten the richness of the cheeses.
Cream Cheese – the main creamy component that melts into a smooth, rich texture and binds all the ingredients together.
White Cheddar Cheese – adds sharp, savory cheese flavor and helps create that gooey, melty texture.
Cooked Bacon – crumbled bacon brings a smoky, salty crunch.
Ranch Seasoning Mix – delivers a blend of herbs, garlic, onion, and tangy flavor.
Lime Juice – brightens the dip with a fresh citrus note.
Sugar – enhances the natural sweetness of the corn and balances the savory and tangy flavors.
Garlic Salt/Garlic Powder – adds savory depth while boosting overall seasoning.

Instructions
- Add the drained whole kernel corn, creamed corn, diced green chiles, sour cream, cream cheese, shredded white cheddar cheese, crumbled bacon, ranch seasoning, lime juice, sugar, garlic salt, and garlic powder to the slow cooker. Stir gently to combine. It does not need to be fully mixed at this stage, as everything will melt together as it cooks.
- Cover and cook on LOW for 2–3 hours, stirring occasionally. As the cream cheese melts, stir until the dip becomes smooth and fully combined. If you’re short on time, you can cook on HIGH for 1–1½ hours, stirring more frequently to prevent sticking.
- Once the dip is hot and creamy, taste and adjust the seasoning if needed. Switch the slow cooker to the WARM setting for serving. Stir occasionally to keep the dip smooth.

- Southwest Corn Dip – Add diced tomatoes, black beans, cumin, and chili powder for a smoky, Southwestern twist.
- Smoked Sausage Corn Dip – Add browned smoked sausage or kielbasa for a heartier appetizer.

Garnish Ideas
Crockpot Corn Dip is already creamy and flavorful, but the right finishing garnish just before serving will make it completely irresistible!

- Extra Heat – try sliced or pickled jalapeños, a drizzle of hot sauce, or a dash of red pepper flakes.
- Savory & Crunchy – try extra crumbled bacon, a sprinkle of crushed tortilla chips, or crispy fried onions.

Scoopers Ideas
With so many great scooping tools for corn dip, you can’t go wrong with any of these ideas!
- Sturdy chips (such as tortilla, corn, Fritos, scoop-style chips)
- Pita chips
- Pretzel crisps or pretzel rods
- Crackers (buttery, whole grain, or seeded varieties)
- Toasted baguette slices or crostini
- Bagel chips
- Naan or flatbread pieces
- Soft pretzel bites
- Vegetable Scoopers (such as bell pepper strips, celery and carrot sticks, cucumber rounds, broccoli or cauliflower florets)
Can I Make This In The Oven?
Of course! Here’s how:
- Preheat your oven to 350°F.
- In a large mixing bowl, combine all ingredients exactly as written in the original recipe. Stir until evenly mixed.
- Transfer the mixture to a lightly greased 8×8 or 9×9 baking dish.
- Bake uncovered for 25–35 minutes, or until the dip is hot, the edges are bubbly, and the cheese is fully melted.
- Stir before serving to evenly distribute all that melty goodness.
Note: If you’d like a slightly golden top, sprinkle a little extra shredded cheddar on top during the last 10 minutes of baking. You can even broil it for 1–2 minutes at the end for a lightly browned cheesy crust.

Storage
Let any leftovers cool completely before transferring to an airtight container. Refrigerate for 3 – 4 days. Reheat gently in the microwave or return it to the slow cooker on low, stirring occasionally until warmed through.

I don’t like cream corn. Is there something else I can use or can it be eliminated?

Denny, Yes, you can absolutely make Crockpot Corn Dip without creamed corn, or substitute it with ingredients that provide a similar creamy texture without the specific taste and texture of canned creamed corn. Substitutes: Extra Cream Cheese & Sour Cream: Increase the amount of cream cheese (add an extra 4-8 oz) and sour cream (add another 1/2 cup) to create the creaminess usually provided by the corn base. Frozen Corn + Cream/Milk: Use 2 bags of frozen corn (or 3-4 cans of whole kernel corn) and add 1/3 cup of heavy cream or milk, along with 2 tablespoons of butter, to create a similar, fresher-tasting, creamy texture. Blended Kernel Corn: Take a can of regular whole kernel corn, drain it partially, and blend it in a food processor or blender until it reaches a creamy consistency.
If eliminating: More Whole Kernel Corn: Use 3-4 cans of drained, whole kernel corn or 2-3 bags of frozen corn. "Mexicorn" or Roasted Corn: Use canned Mexicorn (sweet corn with red/green peppers) or frozen roasted corn for more flavor and texture.
Hope this helps! Nettie
